Seeing a lot of repeated questions in the comments so here's a short FAQ: 1. Written recipe + measurements are in the description (as always) 2. If you don't want to use almond powder, just substitue it with flour 3. You can omit raisins and nuts, it shouldn't change the texture 4. If you're making this cake in a bigger pan, adjust the recipe (he has a video on recipe scaling) and baking time Hope this helps! (I'm not a pro, I just scrolled through the comments and noted his answers hehe)

I made this cake and it tasted great. I love the reduction in sugar in the cake and the frosting because it is just the right sweetness. The addition of almond powder enhances the richness. Just finished making it, I wish I could send you a picture lol. It was really easy to make and for the first time, I didn't mess up my cream cheese buttercream frosting. Whipping both seperately and a little bit together also ensures that you don't overbeat the cream cheese which tends to seperate (it always did for me). I decorated the center with a wreath of thyme, tiny mint leaves from my garden and caramelized walnuts. Thank you a lot !

Hi Chef! Thank you for sharing your version! I've made carrot cake just a day prior to your video and it came out done but not the usual spongy/doness cakes should have. Instead it was somewhat dense like a pancake but tasted baked. And i am not very sure why. But i have 2 questions i would like your thoughts on if you dont mind :) 1) why did you decide not to squeeze out the excess water in thr carrots? Won't the excess moisture be to much for the cake? 2) some tend to add milk into their recipe or at times buttermilk even. Besides adding flavour to the overall cake is there other reasons they add in milk and why did you decide to omit it from your recipe?

1. my carrot wasn't that wet and I think it adds a bit of moisture. don't think it's excessive. 2. yeah you can do that I guess - it'll make it more moist! think it's personal preference!

I changed this recipe just a little bit. I used melted butter instead of oil, I added chopped walnuts, ground cardamom, ground clove and cinnamon. I didn't have any ginger so I blitzed up 6 ginger biscuits and added to the mix. It was wonderful.

Yes,Yes,Yes, I have been hoping you will give us a carrot cake recipe as I have a big bowl of raisins that have been soaking for TWO years as I prepared too much for my Irish Christmas cake I always bake! Beating the butter BEFORE you add it to the cream cheese is a great idea. I made a cream cheese cake last year and the butter and cream cheese did not mix completely and I had some small lumps!! Ive been making progressively improved copy cats of like CheeseCake Factory ( not that that's even needed- CCF IS FANTASTIC) but soaking your raisins in rum ( im gonna do Captin M), not overwheming the cake sides with frosting and leaving it bare with the cutest squished little "buns", liteing the frosting with creme....you are a genius❤

I followed your recipe and made my first ever successful cake all by myself without mum's help 😍 I upscaled it by 1.16x . It looked to tempting that I couldn't wait to taste it and destroyed it so couldn't put the frosting. Will work on my patience recipe 😍🤫

Hi chef Hanbit how are you. Wow! Its so lovely carrots cake. Surely i will bake this with my grandchildren they love carrots cake i bake before its just a simple but I'd love to try this. Thanks for sharing your knowledge we got two things from you today while watching this vedio. First we know how to bake it second we learn many things from you. Excellent videos! You spoke clear and articulate. Very easy to understand for a novice cook like me! Thank you! I like to simplify prep work and also minimize waste. Here are some questions I have regarding this recipe. 1) can I use the carrot pulp from the juicer? Very fine. If too dry I can add some juice back in. 2) can I pre-soak a jar of rum raisin then the raisins will be well saturated? 3) can I use half the sugar for the seniors ? 4) is almond powder = almond flour?

almond powder is almond flour. it's best to follow the video in terms of the steps rather than trying to shorten the process too much - shortcuts sometimes work but at a cost...
