Yes, rear lounge models are very popular in the UK but not so much on the Continent. It might have a lot to do with our weather and the attraction of a warm, comfortable relaxing area inside

Yes you can swivel the cab seats although their use in this type of layout is quite limited - perhaps as a work space or somewhere to read. Really it is the rear lounge where you'll want to be relaxing when you're pitched up.

No oven and I didn't see a microwave, correct me if I'm wrong so quite restricted for long periods

Ovens are offered in all Carthagos now, I believe, and in many models it can now be in the main kitchen unit, rather than up high over the fridge which is a bit improvement. Microwaves are extremely rare in continental 'vans as they tend to use aires where there are no hook-ups

I'd check with your local UK dealer about the oven. Many European models are not fitted with an oven as standard but UK dealers often specify them with ovens to suit the British market. Even if one is imported without an oven, it should be possible to have one fitted by a dealer as an aftermarket fit

How do you pronounce Carthago? I always say Car-thar-go, he says Ka-tar-go

Both ways are accepted. At the factory, it is pronounced Ka-tar-go by almost everyone. Certainly the founder, Karl-Heinz Schuler, pronounces it Ka-tar-go but I have heard many dealers pronounce it Car-thar-go and even Ca-thar-go. I think they'd be happy with any pronunciation if you bought one!
