What string gages and end type are most commonly used. Loop.. ball?

That depends on the back end of the dulcimer really. I use both loop or ball (whatever is available to me). Gauges - I love the Folkcraft strings because they are heavier gauges than most dulcimer strings. They are .11 .13. 24 - I have a link to them down in the description of this video.

Do you think it's safe to tune that DGD tuning up two half steps to EAE? I don't have a capo but I don't want to break a string with too much tension

Yep, probably fine, but don’t go any higher. I’ve tuned DAE before, and EBB also - so it should be fine.
