Hi Varun, being a vegetarian and having lived in Canada for quite a long time, I realized that in general, the gravy for poutine is made of beef stock. Vegetarian gravies are only available in select locations where it needs to be specified by server.

Just an FYI. Poutine is non-vegetarian. The Brown gravy on top is mostly a light and thin chicken gravy. Some places have started offering vegetarian gravy but those are very rare and mostly in Ontario.
