Spanish Omelette - also known as a tortilla de patatas - is a signature egg dish which can be served warm or at room temperature and both are equally delicious. With the three key ingredients being potatoes, onion and eggs, the only thing left for discussion is how crispy you like your potatoes! This Spanish potato omelette is part of my international recipe collection and is made proudly by my good friend Juan who is a Spanish native. YUM.

Ingredients:
3 medium sized potatoes
5 eggs
1 onion
Extra virgin olive oil
Salt
Method:
1. To make the Spanish omelette, peel the three potatoes and then cut them in half, then into even quarters.
2. Slice the potatoes so that they are approx. 1cm thick. If they are too thin, they will over cook and if they are too thick, they will undercook, so this part is very important!
3. Put a medium size deep fry pan on the stove at a low heat. Add a generous serve of extra virgin olive oil and leave to warm up.
4. Once the oil is nice and warm, add the slice potatoes in and leave to simmer for up to 5 minutes.
5. Peel the onion and slice it into thin strips then add these to the pan also.
6. Leave the potato and onion to cook through until they start to soften.
7. In a separate mixing bowl, whisk 5 eggs really well.
8. Pour the egg mixture into the pan and carefully move the mixture around using a spatula so that the egg gets through.
9. Keep moving the mixture for the Spanish omelette around sightly and ensure the edges are not stuck to the side of the pan by slightly sliding the spatula down and around he whole tortilla.
10. Leave it to cook for around 10 minutes.
11. Get a large, flat dish and lay it down over the top of the fry pan. Holding the fry pan in one hand and placing your hand flat on top of the bottom of the dish, flip the pan so the Spanish omelette falls on to the dish and the pan is empty.
12. Transfer the raw side if the Spanish omelette onto the pan and leave to cook for another 10 or so minutes (depending on your preference).

This is the proper Tortilla Española , my mom, from Spain always makes this and I am always happy to eat it. Our home uses smaller dices potatoes and less onion, but every home has their own style, which I love. Its amazing that you can ghave so many variety with just three ingredients, patatas, cebolla, y aceite. I also remember going to a small place near the local beach in Cantabria and getting un pincho de tortilla after swimming. Great memories.

I think its important to mention that a nice trick is to leave the potatoes and onion with the raw eggs for 5 to 10 minutes in the bowl before putting the whole mix in the pan. And also to fluff it up on each side by gently pushing on the sides while its cooking. Great video guys!

my sister makes a great tortilla , she does like you mentioned by leaving iit , she says the potatoes and onions get egg attached to them and that makes a better tortilla ..

I lived in Spain for the first 8 years of my life. This tortilla looks amazing, it looks just as good (maybe even better) as my family in Spain makes it. My favorite Spanish dish is boquerones en vinagre.

Muchas gracias! After living in Veracruz, Mexico for a few years this is my favorite meal that I learned to cook while there. It was called Tortilla de Espana in Veracruz. Every person I’ve ever prepared it for absolutely loved it! I offered salsa on the side and served it with buttered toast. Thank you for sharing this video!! Tho I know how to make this excellent dish, it was wonderful to see someone prepare it who knew what they were doing!

I do it exactly the same way, except that I only add salt when the potatoes are in the egg mix in order to not let the potatoes loose water into the oil. Also, let the potatoes rest in the egg for 30 minutes, it will enhance the flavor. Saludos

There’s no other way with tortillas, they’re supper heavy compared to omelettes 😅 They also break easily and you can’t bend them as you can with omelettes

The timing couldn’t be more perfect!! I was planning on attempting this dish this week for something different and had been googling recipes. Thanks to Juan Carlos and Vincenzo for this treat!! As for your question, of the 5 times I’ve been to Europe, I’ve visited Spain 4 times and it’s beginning to feel like a second home. Love everywhere I’ve seen but especially Jerez (where my husband and I have some of our very best friends, but I’m also obsessed with Sevilla, Barcelona and Granada; so hard to pick and so so much more to see there🥰😍 Salud

Thanks for the great recipe! Has tasted fantastic! A small note: the potato-egg mixture must infuse another 10 minutes. If you put the mixture directly into the pan, then everything is still very liquid and turning the tortilla is then a bit challenging.

Marvelous recipe and Juan is a natural in front of the camera. I really must try making this dish, it looks wonderful. I do hope to see more videos with Juan cooking his family's dishes. Super nice! I make it a bit different, by frying the onions alone a bit first, then I put the potatoes on top :) I also like to cook it fast with the egg so the inside is a bit more raw (but does not leak or anything)

In Pakistan there's a dish called " potatoes eggs" for that first cook potatoes with onion, tomato & other spices then add beaten eggs & keep mixing till cooked kind of scrambled then garnish with coriander eat it with bread ( chapaati, roti) it's my favourite too...

El aceite de oliva soporta bastante temperatura y puede ser reutilizado...el de girasol no...habitualmente el de girasol en España solo se utiliza en repostería, ya que tiene menos sabor y no interfiere con los sabores del dulce. El de oliva se utiliza en fresco ( ensaladas, pan con tomate y jamón...), para freír y para los guisos....la mantequilla y manteca de cerdo solo en repostería...

A restaurant I know adds one sweet potatoe to give it a delicious sweetness. No one knows where that sweetness comes, but it is wonderful addition I find.

I'm Puertorican and we make this all the time, but put our own twist on it. I like to add sofrito, seasonings and ham or salchichas! It can also be made to use up leftovers, like amrillos! Great video!

My husband and I have been to Spain 3 times the last time for 2 months. Love the culture there. This dish had become one of our favorites. One place added a bit of sausage to it. It was great either way. Thanks for the video and a little peak back at Spain

@@vincenzosplate it's too hard to say what my favorite place is. Madrid for the sights,Granada just because it's such a cool place, Torrevieja, the beautiful beaches, Murcia, some wonderful friends. Love different areas for different reasons.
