Appreciate the comparison between the pigs and people. How we resist taking that leap of faith (jumping off the trailer), but when we do, we come to realize how much better our lives become, in His grace, covered by the blood of Christ.

The pigs look a lot happier Wes and I'm sure will be a lot healthier in the fresh and bigger lot. I like those savings you made with your changes from last year and I'm especially glad to hear you share your faith. Not enough will do that these days openly - which is a shame. Thanks for sharing it all.

Nice job, Wes. Make yourself a wooden ramp with wheels on it that has a gradual slope. Ideally, staple some turf down to it and attach a couple of metal "hooks" that will latch into holes at the end of the trailer. if the slope is gentle enough, the pigs will walk right down it.

Hi Mr. Green Jeans. I love the "Meditations on Piggy" We can find Godly messages in the most interesting of places, (like in a piggy trailer!!!) I try and get out of my trailer at the same time every day, and I have a set of prayers on my white board over my desk, so I see them all day long. And my pastor does daily prayers via You Tube every evening. Well, here's to hope that the Gen 3 Piggy's surpass their elder Piggy's. Those pork chops look really good.

Why skin the pigs? In Australia skin is left on. The butchers shave the hair off. The skin makes nice crackling when you slash the skin n roast it after rubbing oil salt into it.
@TDSP9981
@TDSP9981 8 ай бұрын
A lot of times part of the contract for butchering is that the butcher gets to keep the skin and bones and blood to sell to other companies who use it to make other products. Essentially it subsidizes the cost of your per pound fee.

Most people in the US have gotten away from the old way of butchering hogs. While I grew up, we raised hogs and come November shortly before Thanksgiving we would butcher ours with help from family and friends who would receive meat from the butchering. I can remember getting up early in the morning before day light to get the water heating up. After a good early morning breakfast, the men folk went to work killing, clean and butchering those hogs. By about 4 or 5 that afternoon most of the meat was cut into pieces to get ready for the next day's work, mom and dad would have the meat in sugar and salt before stopping. Theirs one year that I can never forget, that was the year JFK was assassinated, we were butchering hogs that day when our mom asks my brother Jimmy and I to go borrow some pans from one of our neighbors. Our neighbors told us about Kennedy's assassination, upon returning home we told our mother who went to tell the men. From our back porch you could see the hurt those men went through but could not stop to grieve. I love bacon with the skin on when it being cooked. We always enjoyed the skin after mom would render the fat off. Every once in a while, she would put some crackling in the cornbread, oh how good that tasted with pinto beans or just a little honey. Making myself hungry so I had better stop. By-the-way I was raised in the 50s and 60s, more and more now a days the old ways keep going away, before long there will not many of us left that remembers the old ways! Have a great day there in Australia!

Our Aussie way is a little different but I do agree skin is the best bit. First dibs on it in our house, is the cooks privilege. So the pig killing day starts with my husband getting up at 3am to light the fire under the tub, under the peppercorn tree. We hot water bath and scrub down the skin of a freshly dispatched pig in an old caste iron bath, suspended by concrete blocks, over a slow burning fire to heat the water. (That takes 3 hrs to heat the water.) So after the wash and the air turning blue from those attempting to lift the now hot, greasy pig out of the bath before it cooks and with the pig more often than not getting the better of them, it is finally hoisted up, gutted and cleaned out, tail to the dog and trotters off. They then scrape it with a sharp knife and burn off the hairs with a blow torch. When the carcass is fully sorted, a final scrape with the knife and a hose down before wrapping in a sheet (to keep dust and fly's off during transport to the shed) Then unwrap and hang in a cool room for 7 days before cutting up, bagging and freezing. Also we grow our pigs solely on water soaked wheat and vegie scraps. They take longer to grow but are cheap to feed and live the life of Riley under the orchard trees, usually for 12 months. They are tasty, tender and not like bought pork at all. You might wonder why we don't use a butcher. The reality is that it adds cost and learning to butcher a carcass is not difficult. Also our nearest abbotoir is 2hrs away by car. Our cool room cost $1200. It is small but will hold two pigs or two sheep. Not large enough for a steer. The meat band saw was about $750. We have had both for over 10 years, so they have paid for themselves and we have had no trouble with either. So the old ways have not died in Australia and I think more and more people are realising that shop bought food is quite inferior. The lack of taste, rock hard texture, not to mention for pork it has been raised on penicillin to prevent disease in overcrowded piggeries. Our pigs wallow and enjoy dappled sunlight, fresh air and the company of their family.

Hello. 2 things: 1. at the beginning, amazing how you through the food over the fence into the bucket- so precise and not spoiling anything. 2. the price topic. You may have the same costs as the commercial food has the price. Cost are not prices. So, the quality of meet from commercial meat have to be less because the production costs are i guess 1/2 or 1/3 of the sales prices. I know from you point to of view it doesnt count - but its also a testimonial for high quality meat versus the garbage you get at the super market - not considering the well-being of any animals during lifetime. So, spend more money on local meat where you know where its coming from! I like your approach very much and how you are concerned about the bigs anh how they grow up. 🤘

It's not often you'll find that any of the processors in the country that'll leave the skin on pigs. Most of the time it's sent to a leather processor. My grandparents butchered their own hogs for the most of their married life. Think they stopped around 1986 or so, that was just due to age. But grandpa was in charge of shaving them and rendering the lard and making the cracklins

He doesn't want her to get bred too early

@@tonygrimes13 first off…he has like 3 or 4 new girls. He doesn’t have to put the male in. By that logic he’d have more of a mess on his hands with Rooster in the pen with all the little girl pigs being they can begin to breed as young as 5 months…

It's because the little ones need free choice feed (all you can eat), and Sue doesn't anymore. Tell the nephew that Sue will have a paddock pal probably around November.

Better eating for a lower price. But you are not counting your own labour. I bet you will be enjoying that pork, though!

His labour cost is paid with the satisfaction of raising his own pork, and the knowledge and experience he gains from the activity. Plus he can now add another item to his resume - PIG FARMER 😂

Wes, you need a shock stick. Now, before all the Karens jump in, judicious use of a shock stick is not abuse. In fact, it can often avoid a pile up in a chute that could result in injured animals. I have been dealing with livestock, mostly pigs, for 65 years. Have never abused an animal.

Wes, question for you. Why did you not put the other pigs in with Sue instead of making another paddock?
