When I tell you cooking it in the oven set it over the top, it's no joke. 400° for 45 minutes, and it sealed in the flavor and the juices with crispy skin

This is quite literally the same recipe for jerk marinade that I use also and I've been using it for over 10 years! I now trust all of your recipes. Pro tip: add about a 1/3 cup more o.j and 1 tbsp of ACV to the marinade and simmer on stove at medium heat to create a bomb ass jerk bbq sauce.

I’ve used this recipe twice, and it is so good! I will say that using scotch bonnet peppers makes a difference. The first time I used habaneros and it was really good, but the second time I used scotch bonnets and babbbyyy! 🔥

There’s a Caribbean restaurant where I grew up that has always made incredible jerked wings - they won local food fests and wing fests in the area for several years. They bottle their own sauces: jerk, Habanero pepper, marinate, etc. Look for Krista’s sauce online.

You can do it, use indirect heat (half burners on, half off) until you get better at it. Just move the chicken over to the direct heat when it’s almost done to crisp the skin.
