Big Sardine doesn't want you to know about this. It would alarm the citizenry. They want you to calmly continue to buy their totally normal canned sardines. But I'm a reckless truthteller in a world of lies, gimmicks, and Euro-centric fish snacks.
Spoiler Alert: I use a milk frother to mix spray olive oil and wasabi all over the Canned Fish Files Headquarters, then consume the resulting concoction on deenz. What else would you have me do???

Hey btw, www.amazon.com/gp/product/B008D3079K/ref=ppx_yo_dt_b_asin_title_o09_s00?ie=UTF8&psc=1, this is the wasabi I used. It's quite different from the neon stuff they have at non-fancy restaurants. No clue if this is the real thing, or some blend. The ingredients still list "horseradish" at the top, but it's likely that Japanese would translate wasabi (the plant) to "horseradish", as in, "Japanese horseradish".

A lot of horseradish is powdered green to be re-labelled as 'wasabi', unfortunately. Apparently the real deal is very difficult to grow so is relatively rare.

Real wasabi must be ground fresh to use. Typically extremely expensive compared to alternatives

Matt saved me. Back in the day I remember I used to like sardines, and the impulsion to pick up a can hit me randomly a few months ago. I went to the store, bought a random can thinking "yeh w/e it's canned fish", cracked 'em open and...it was kinda nasty. I figured I just grew out of it or something. Well, fast-forward to like a week ago, KZbin decided to just randomly send me down the rabbithole of your videos. Next thing I know, I'm cracking open a can of hagoromo 'dines with some curry pan for breakfast, and enjoying them once more. Thank you for reuniting me with my childhood fish friends. Also I see you're a fellow synth appreciator, I love the background tracks, I assume you made them yourself? Is there anywhere we can grab 'em?

I got a big plan to eventually release the music. But wow, it's just a lot of work to just make the videos. And the music kinda would need to be re-mastered to be released.

Hey Matt. Totally late, for some reason my notes weren't coming through, so I reset them. The wasabi wasn't real spicy like your probably used too regardless of the larger quantities you used because it's actually a real wasabi, just stored/preserved differently then the fresh wasabi root which is really expensive & used @ high-end restaurants. The stuff that most people eat which is very spicy...is just a powder that is mixed with water, it's not actual wasabi, more like horseradish root, it also loses it spice & taste within 1/2 hr or less.. It's the wasabi plate pic you used on your thumbnail. Awesome video! Like that little mixer too! 👍👍

Yeah, no way Jabroni’s Wásabi deens were going to be hot enough. Not his fault, these prepackaged flavored deens have to toe the line. They have to try to hit something that won’t blow out sensitive people. Your way is much better. Load it up! Great vid Matt.

the only problem with this was, they didn't get to soak and absorbs the flavor. i wonder what if you tried making your own sardines from scratch? from fresh caught sardines to making your own oil and flavoring and canning it just so you can open it a month later after they had a good time to marinate, id watch that, id watch you try, and eat some "Mathew Carlson Deans", that would be an awesome video haha

DAMN. you took that wasabi loaded dine just as well as Chris Rock took that slap!! I hear you on the pronunciation thingamabob. I'm familiar with the Japanese pronunciation of "nakiri" (a Japanese vegetable knife) and to hear it pronounced in an American/Western style is so...weird. just like wasabi, it's the second syllable that's super weird haha

you should hear how I say "Osaka".... i think you know, when it comes to wasabi, there's kind of a limit to how intense it gets. Like, your sinuses can only flare so bad, it doesn't affect your eyes, nothing compared the lingering effects of capsaicin.

@@AntFong I still don't know what's in my tube. It's not the neon green stuff (texture is different, color is way different, hits the nose different). The amazon reviews all assert that it's "the real stuff" but all the reviews sound like they're written by people that don't know anything. I think you could make a product that was markedly different from ordinary takeout wasabi and still have the primary ingredient be regular horseradish.

I just found this channel tonight while researching how to make 18th century salted pork, and unironically, this is now probably my favorite YT channel of all time. If forced to describe you in a sentence, I would say you are like Hamilton Morris meets "In Search of" era Leonard Nimoy meets Jacques Cousteau. Truly excellent edutainment!

seems like it's finally exploding. i found this channel about 2 weeks ago, served a video by the algorithm, and it was under 50k subs. now it's at 54.5k without matthew even uploading a video. based on other comments i've seen, the channel has grown from like 30k within the past couple months too. happy for matthew, he deserves it, i love this channel and now i'm addicted to sardines.

If you were to use a smaller diameter container the oil would be deeper and you could submerge the whisk and not spray oil everywhere. This would also help to make the emulsified oil you are looking for. Also, the emulsified oil would not separate.

Never had real wasabi but I've had the stuff at the sushi restaurants and the stuff they sell at the grocery store and call it wasabi. Its just horseradish dyed green. But I can dig it. As a fly fishing guide in Alaska years ago I'd cook up freshly caught salmon for shore lunch and sometimes would serve it with "wasabi" mayo I mixed up myself using the powdered canned stuff. It was pert dang goodern' heck. My guests/anglers loved it! Never thought to try it on deenz. Now I gotta gotta but on some sprats which I much prefer over the larger pilchards. I love this channel. Its like canned seafood drugs and Matthew is the neighborhood pusher. Shut up and take my money!!!!

I'm a sprat lover myself and I'd like to know where you get yours ❓ I'm buy mine at Walmart the brand is Polar and they come in a flat round can with a clear peel away top for $2.12 only bargain of the century. I say bargain because I'm not impressed with 95% of sardines.

@@roastbeefsandwich6769 I too love the Polar's. I get the Polar's, KO's, and Brunswick sprats at my local HEB grocery. The Brunswick's come packaged just like the Polar's with the clear peel away top. All three brand's of sprats are good quality and I enjoy them all and yes, they are all a bargain! I haven't gone down the rabbit hole yet with Nuri's or Ramon Pena's but will soon. Probably get them from Matthew's sardine and canned seafood pusher online. Mahalo!

@@robertleslie2467 2 years ago at a Delaware flea market I was buying sprats in a jar, for only $2.99. there was at least a third more than what Polar offers but the retailer or the supplier stopped offering them ☹️☹️☹️ all I remember is they were a product of Latvia and they were packed vertically in a clear jar.

💀 ok here is what I learned. 1) stop going to the fancy fish shop to buy imported deenz. The Connetable at the supermarket are just fine (I live in France 🇫🇷). 2) I am under utilizing my milk frother 3) I can buy plain deenz and make my own sauce probably better than the factories. I’m thinking Tex-Mex, Tagine, Creole, Korean BBQ… 🤔 I think you are on to something here

Hey, awesome. I have one of those little squiddleedees too, and it's lunchtime, so I gave it a shot. Delicious! Like you, I found I wanted more wasabi, even though I'd put in a good solid slug of the stuff; I think the olive oil might do a lot to tame it. I emulsified the oil and wasabi with a little vinegar left over from a jar of homemade pickled red onions, and while that might get dangerously close to cooking, it did create a nice foam.

Nice ! Gotta try this technique. A way to avoid most of the splashing when frothing up the oil could IMHO be to do it in a tall and narrow glass, so that the end of that mixer remains underneath the surface of the liquid even at full speed.

Jabroni got me curious about using the wasabi so I ripped open a tin of KingO’s and sprinkled the powdered wasabi on. And yes it was very good. Great video but you may need to use a glove box to contain the spray from that electric thrasher. Always exciting to see a new tool.

this guy is a gem. at first I was like how does he only have 27k subs?! and only 15k views on this video! it is awesome! then I remembered it is a video about sardines and there is probably a limited audience for that. I for one am glad this exists and hope he continues to make these. he has good vibes, only comparison I would say would be maybe steve1989 (the guy who trys MRE's sometimes very old ones...) anyway my point is it is good content even if you don't eat sardines, he is just funny and enjoyable to listen to him talk , I feel relaxed after watching and also usually want to crack open a can of dines lol I had never even ventured to try them until I watched his videos which helped me get over the creeps I had around it mainly involving the spine. he seems to love to eat the spine , that part was what freaked me out. now I just toss it in, if you were blind you wouldn't even know anyway.

my 2 standbys for sardines are Tabasco sauce or Thai Nam Phrik (50/50 mix of fish sauce and lime, with diced thai chilies, garlic, and cilantro added)

I'll try that, ive already got real wasabi, not the fake horseradish/mustard stuff thats sold as Wasabi, but adding it to the oil, I'm not sure thats the best way.

add some egg yolk to the sardine oil and make a sardine oil mayo with it....I'm totally going to try this

Sardine oil, egg yolks, a bit of lemon juice and zest, salt if needed, maybe some cayenne or chili paste to round it out.

Get a plastic top, off a disposable whatever, and make a little doggy post-surgery satellite dish-type hat you put over the bowl and splatter is contained. C'mon man, sauce up some fillets.
