Ventresca is a great idea for people that love tuna but are worried about mercury intake. Not only is it expensive so you can't afford to eat a lot, but mercury has been shown to concentrate in lean muscle rather than the fatty belly. Yellowfin is also one of the tuna species with lower mercury levels as a whole.

Hi Matthew, thanks for the video. I’ve enjoyed it as usual. This is a very typical situation with canned tuna. On one side you have those round cans with either tuna flakes or chunks in oil or sauce. Pesonally I always consider them of lower quality. Then you have square or oval cans with what I call ‘tuna fillets’. Those are kind of cut off filleted tuna pieces (here this is what they call ‘ventresca’). Unfortunately as is usual for Ortiz stuff it’s really expensive for those traditionally made cans. Obviously tuna chunks cost from €0,50 upwards and fillets start at about €2,50. For fun you could make a comparison with vegetarian tuna such as Loma linda tuno, some time.
