I just bought this for xplane but it doesn't seem to have that notepad with all the options shown in the start of the vid? All I can do is swap the navaids and add/remove the chocks. Am I missing something?

It's probably because this is the one for Microsoft Flight Simulator.

I understand you don’t exactly flare with it at landing so much as fly it at Vref onto the runway. I’ve tried that and found the method to be more satisfactory than that piano drop when one attempts to flare it.

So I can't find where to turn on the aux wing tanks. Please help

The tank selectors are on the floor between the seats. Press Ctrl and 5 at the same time, the camera will move above the tank selectors.

Yeah, the turnover rate is kinda high but at least we don't have to feed the bears.

so i've set my dirt level to rapidly change and i've flown the same plane with same livery for 107 hours without cleaning it but it still won't get dirty for some reason got the exact same settings as you from the beginning, just curious if i've done something wrong or if some of the liveries that comes with the plane might be bugged

I don't think you've done anything wrong it might be a bug, because I haven't run into it. I did notice that it got dirty then plateaued for a while and then started getting dirty again. This may or may not help but maybe cleaning it will reset it.
