Great video as usual Mark. There is a lot of debate about whether rinsing fish in fresh water prior to or after filleting is a bad idea. For anyone who wants a deep dive on using the whole fish, I recommend Sydney chef Josh Niland's book "The Whole Fish Cookbook". For what it's worth he advising against rinsing fillets. He dry ages fish like you would with steak- challenges the idea that fresh is always best.

Cheers dude ill check it out! I try to keep the fillets away from fresh water but give the fish a good wash down before I fillet them. Man back in the old days we just put fish in a round bin no ice in sun all day haha

Yummy that’s looks amazing it’s surprising how much meat is on a whole fish when u brake it dwn an different meals you get .have you tryed deep frying the snapper tails as chips👌go well with the skin crackling cheers mark
