I used to cook for them, long ago, back in the early 1980's. At that time I was told by management they considered me one of their top 3 cooks in the country. That was based on 4 main things: I cooked the food perfectly, I laid the food out on the plate neatly, not piled up, I had each plate out of the kitchen in under 10 minutes and (I was the lunch cook) I served up to 300 guests between 11:30am and 1:pm during the lunch rush, and I usually did that entirely by myself with no other cooks on the line. Many things have changed since I cooked there however many things remain the same. They use a liquid butter sauce for almost everything which contains little or no butter. It is made from soybean oil and lasts a very long time on the shelf. Its a healthy alternative to butter and it works very well to cook with. It is a blend made especially for RL. The garlic used in many recipes is a dry garlic mix which contains many other ingredients as well as herbs and spices. It is used on everything from Shrimp Scampi/Garlic Shrimp to the Cheddar Bay Biscuits. The biscuits came out in the 90's and at that time I switched from cooking to working in the back room preparing many items such as the crab and lobster as well as the biscuits. They are made by adding cheddar cheese to the biscuit dough and when the biscuits are cooked the top of each one is lightly brushed with the garlic butter sauce mixture. They were an instant hit! Back then (but I don't believe now) the kitchen was run on a time clock. The wait person would take an order and before handing it to me they would punch the time on a time clock. I was then given 10 minutes to have every dish cooked and again punch the ticket in the time clock. There was some kind of bonus, I believe it was part of a profit sharing deal they had with employees and that would increase if there were little or no tickets with a time stamp of no more than 10 minutes. Everything in the kitchen was set up so it could be cooked in 10 minutes or less with the exception of the larger lobster tails, over 9 ounces in size. Many things were baked/broiled in a 600 degree (F) pizza oven, which cooked things very fast. The larger lobster tails took about 13 minutes each so I would punch the ticket at 10 minutes and lay it next to the plate. Then when the lobster was done I would put it on the plate to be served. The wait people loved when I did this because they always knew their food would be cooked perfectly, management loved the 10 minute time stamp. On things like steaks and lobster tails I would turn them over and make a shallow cut so I could make sure these items were cooked perfectly. In the 3 years I cooked I never had a single steak come back as being cooked at the wrong temperature. In fact I only remember one plate ever coming back to me in the kitchen and it had the largest beetle in the middle of it where someone tried to scam the manager out of a free meal. Here in Colorado we do not have beetles that big, plus the management knew I looked at every detail of my plates and something like that would never get past me, or even enter the kitchen undetected. I have also cooked at the expensive hotels doing mostly French and German cooking and one of the many good things I can say about RL is that they have the cleanest kitchens I have ever seen. They are very on top of every detail from sanitation to food storage and handling. No...I am not a paid spokesman for RL, I am simply relaying what I seen there and my experience. Did I see some bad stuff too, sure, maybe 3 times in 3 years. I won't mention those things because they were rare freak occurrences that would never happen again. In every kitchen, in every restaurant, and including your kitchen at home, sometimes something will go wrong, but I have never seen a cooking environment so controlled, organized and sanitized as that of RL. Of course some of their restaurants run better that others, but they never stop trying to improve everything they do. Cooking there was occasionally a nightmare, only because of the number of people coming through the door. But that made the day go quick and all in all it was a fun job. For the record, with any restaurant, you will probably get the best cooked food around 3 in the afternoon. After the lunch rush and before the dinner rush starts. During that time the cook is more relaxed, less stressed and better able to cook your food more perfectly! Tips? In my opinion, If you think you don't like scallops, try them deep fried and slightly well done, that gives them a sweet flavor that most anyone would love. I also recommend fried clams on the slightly well done side. When it comes to Lobster Tails I would never order a lobster tail steamed or boiled! They have a much better flavor when baked/broiled with a dab of butter on top. One day I ate 6 of the 6 oz. tails in a row...but lets keep that between just you and I? lol Hope you enjoyed the inside info!

Ken, if Red Lobster's in your area do endless shrimp from time to time like they do in the states, you should do the endless shrimp challenge. Matt Stonie did it a few years ago. He set a calorie goal for himself and went for it. I'd like to see that. I guess you would have to get permission from them to film inside though.

So many questions in this one, well here goes! 4 x Lobster is good with me. Nope, cold seafood is a pass unless it's prawns, or shrimp as you would say. About £30-40 per gift but it usually runs to £1k total (big family) and we start shopping around August to spread the cost.

We have great seafood on the east and west coast but in Ontario it’s not as easy to find. Even still, Red Lobster isn’t a place known for great seafood. there are just as many people that are disgusted by it as there are ones that think it’s good seafood.

Depends on where in Canada...I live in a town that’s known as a fishing village in Nova Scotia ... we get fresh everything. I’d never even eat at a red lobster because I know I’d be disappointed. Personally, I think NS has the best seafood lol
