Himachal Pradesh is not only known for its lush green mountains and breathtaking views but also for its mouth-watering delicacies. What makes Himachali cuisine truly comforting is that it is predominantly homely yet rich in flavours. One of the most prominent dishes of Himachali Dham, a traditional feast is Madra. Different regions of Himachal have different type of Madra and one such variation is Mukund Wadi Ka Madra - sundried lentil squares cooked in a tomato gravy.
This flavourful Himachali dish is created by Chef Santosh at Courtyard By Marriott Aravali Resort.
Recipe:
Ingredients
30 ml Oil
30 ml Ghee
50 gm Mukund Wadi
20 gm Crushed Coriander
1 gm Cumin Seeds
30 gm Onion
10 gm Ginger
10 gm Green Chillies
60 gm Tomato
1 tbsp Turmeric Powder
1 tbsp Red Chilli Powder
2 tbsp Coriander Powder
2 tbsp Garam Masala
Method
1. Heat oil in a pan and add the spices.
2. Pour in tomato and spinach puree and mix well.
3. Add the mukund wadis and cook for few minutes.
