Heidi, I wanted to make a comment about an interesting thing I have learned for your new learners in dehydrating. Over the years, growing my own herbs, vegetables, and also buying organic fruits and veggies or frozen veggies, I dehydrate everything I possibly can to eliminate the need for freezer space, storage space, or the time and space canning takes us. Because we are a very busy family with our homestead and our family business, I do not have a lot of time to spend in the kitchen cooking and baking (I am the only female with my husband and my grown son here), I have been doing a lot of cooking in my crockpot with the dehydrated foods (I only use the dehydrated foods and soon- dehydrated meat.) So, I have my long-term food storage pantry in my kitchen and I have jars and jars of dehydrated everything. When I make a meal, I start in the morning and I grab the jars I want for the meal and I start throwing in this and that to make the stew, soup, beans, or whatever. We raise rabbits and chickens, and use them in all those dishes. It is amazing and fun and makes me feel somewhat accomplished. I feel more prepared with food storage than I did with canned foods because for me, I feel like dehydrating can be done so quickly and easily as compared to canning. My working jars of vegetables and herbs, I do not keep sealed because I am in them too often. The other jars I have sealed with my break bleeder as you have taught me. My pantry now looks amazing! So many beautiful and colorful herbs, fruits, vegetables, beans, etc. Today, I made lentils and my family LOVED it! It takes about 3 - 5 hours on high for me and it takes me about 10 minutes or less to prepare. Most of the time, I am NOT using frozen or refrigerated anything - just the jars of dehydrated foods. Now - if you order these foods online dehydrated, they are very, very expensive. You can dehydrate the same amount of food for only pennies and some prep time. The jars of dehydrated food take up considerably less space than the freezer or refrigerator extending your pantry considerably. Heidi, I know you talk about all these things in your videos but I just wanted to encourage your viewers to do it! It is so worth it. There is another reason to this as well. When you open your pantry (if it is organized), you just shop the shelves (just as you say, Heidi). I walk up to the pantry and look at all those jars and just pull what I feel we either need nutritionally or what I think would taste good for that dish. It is TRULY a great way to BE PREPARED. All you need is hot water to cook any of these foods and some of them can be eaten without rehydrating. It is a win-win-win. IF you have to bug out, you can store these foods in other ways that are not in jars but no matter what, it makes travel easy because of only having to add water. If you can start a fire, and you have water, you have a meal and it weighs very little. So, I'm sorry for being so long, Heidi, but I have been so thrilled with my results as your student that I just wanted to share to encourage others just starting out. I thought I'd never arrive but I finally feel like I'm really on the path now. I have filled one pantry and I'm starting on another. :D

I collected 8 old oven trays, used 4 lengths of metal chain, some wire and a hook. I hung the oven trays from the roof direct over the woodstove. Things on the first tray brown a little, but the rest work great! Were a bit stingy about burning firewood, so theres rarely anything left in the garden to dehydrate by the time were running the woodstove, but i use the time to dehydrate meat and other goods i got on sale from the store. Then it gets hing in the attic to dry herbs over summer

Are you reading my mind again??? LOL! I have spent a lot of time dehydrating this summer and told my husband the BEST time to dehydrate is fall and winter so that we can use the woodstove. I think it's been kind of expensive running the dehydrators all the time. I wanted him to see these racks. Just asked him to check our your videos about this yesterday.

Those racks come from an Excalibur food dehydrater, which are pretty expensive. But you can order the racks separately, way less expensive, and use them for this wonderful homemade drier. Patrick is a true MacGyver!

These are not Excalibur racks, they may be made by the same company somewhere but they have a different brand name. We pay $10 a piece for them at our local store

Hi Heidi, boy, I was going to ask you where you got that cast dehydrator! I bought some racks to go into our kitchen wood stove. Our Home Comfort ( Matilda) has a huge oven! And soon she will be "On" all the time :-) Hummm, I could buy those smoker racks and place red bricks in the oven and stack...Great ideas!

Fascinating. How does your drying rack's performance compare to your Nesco dehydrators? And big a fire do you need to build in your stove? I'm buying a Kitchen Queen 480 for my property and this is very inspiring!

Not easy to compare as they work differently and depending on what I am drying and how (on top of or next to) will make a difference on time it takes to dry. Some things dry just as quickly, some quicker, and some take longer

No, that was done by a local mason guy when we had him redesign the old fireplace in order to fit that wood stove inside

@@RainCountryHomestead OK, TY, I will get my mason guy to look at my situation. I had the whole fireplace removed and everything was re-stoned on floor and walls, and wood stove was put in. Have to have him look at it and see what he can do. Do you use an Amish fan on the wood stove? I do and am wondering if I will be getting that corner too hot??? Would hate to build it and then have to tear it out. :-(

@@marthaadams8326 I had one of those fans for years that used the heat from the wood stove itself to circulate but after several years, it just quit working. Something wrong in the wiring. Patrick tried to fix it and is usually real good at repairing wiring but we never got it running again. Possibly got too hot? But seems to me it should be made to handle it

Not sure the size of the holes in your racks, however if you look up stainless steel jersey racks or stainless steel mesh barbecue grill grates as well as wire pan grate you can find similar racks.

Hi Heidi I was wondering if i dehydrate my zucchini is it ok if after i steam them, if i make raw zucchini chips? i want to put spices on them and maybe fresh or dry herbs in a container, i don't use oils or salt would i be okay to vacuum seal the zuchhini chips after they are dehydrated? if i making different vegetables to make recipes and then dehydrate them would it be okay to vacuum seal them for long term storage?

If you steam them, they would not be raw anymore and why would you want to rehydrate then dehydrate them again? Why not just take y our fresh zucchini, slice into thin pieces, then add your spices, then dehydrate? Yes, just like the zucchini from our garden that I dehydrate, this would be no different for storing. Adding spices would not change its shelf life nor would the shape you decide to cut it into nor would it make a difference if it was steamed instead of raw. Dehydrated food is dehydrated food be it raw, cooked, or seasoned, and is all the same for storing into jars or mylar bags

The problem with shipping is not so much the weight, it is the size and shape. He can make them to fit in a flat rate box but that is still $20 to ship anywhere in the US but will cover any rate. The main thing people are not willing to pay for is the time that goes into them plus the cost of materials
