9 and 7 are the ideal numbers for pumpkins and melons respectively. You can double click for both items and trade way faster that way, 8 means you have to click a unique stack every time you trade.

It might be nice to color coordinate the whole villager hall, for example when looking for a specific trade instead of looking for the right sign, just look for the lime concrete block above his head, and have a board that says which block correlates to which villager

Mumbo, water doesn't get backed up like hoppers and doesn't lag. Also you should have a water stream that fills your inventory with pumpkins and melons when your trading, that goes in a loop with a hopper and a dispenser to keep them moving.

I know this episode was released a couple of weeks ago, but I am currently binge watching. One thing that has griped me, since I started watching Hermitcraft 3 and onwards, is when there is a sign, with writing, could Mumbo be so kind as to let the sign hang for more than 1½ second? We are not all Native English readers.

It doesn't get exponentially more difficult, Mumbo. It gets quadratically more difficult. If N is the number of sea lanterns placed, visible progress scales with N^2, not 2^N. Trust me, for large N, that's hugely more efficient.

Frost walker isn't quite as bad as you might think. Turns out you can walk on magma blocks without taking any damage at all if you're wearing frost walker boots. No clicking, no camera shaking.

You mentioned the Console editions of the game. I have been finding a few differences for sure. The Enderman farm doesn't work since on the Xbox live realms version you apparently are unable to use the name tag on the Ender Mite. Also item sorting on the Xbox live realms seems to be broken.... The biggest issue so far was the Wither.... When Spawned he will explode and destroy every block in a 4 block circle or larger around him... That is a big problem since he cannot be trapped anymore like you see at the top of the world in the nether. The Wither definitely destroyed almost all of my base and nether portal highway after I discovered this. The mine cart wheat farm works pretty well just not amazing yields. I am not sure what else is different yet I am slowly discovering the differences.

Unpopular opinion: I think the sea lanterns are too densely packed, and maybe it would’ve looked better if they were more spread out. Still, as it is, I think it looks incredible and I’m proud of Mumbo for putting so much tine & effort into doing that and beautifying the base in general

Absolutely please do pocket/10/etc redstone. Even if it's just some simple concepts and farms that will WORK in that version, it would be amazing to be able to come to you for them. =3 You could start with simple basics videos on how the mechanics work, and maybe how they're different from Java, as you figure things out, then build from there.

you should filter the pumpkin and melons from the farm and then send them through the hopper lines; have one for melons and the other for pumpkin

I think the problem is that when melons are harvested they drop as a bunch of melon slices, but the pumpkins drop as 1 single pumpkin. This means that the sheer amount of melons in the system is clogging it.

Divide your minecart track for you melon and pumpkin farm into two tracks and use 2 different minecart hoppers and 2 different hopper lines.

I'm probably late on this, but have you thought about putting in an auto-shutoff circuit on the melon/pumpkin farms so when the storage gets full it shuts them off and prevents backing up the transport line?

Pocket edition redstone is a fun thing to play too. Without piston BUDs you can make some wiring more compact. Edit: didn't notice 1.2 is out already, so it's called ‘Minecraft’.
