Hi, can this be done a day in advance and placed the fridge? Or will the dough not have the same consistency as the day of. Thank you. I appreciate any feedback.

Yes you can make them ahead, just be sure to wrap the container in plastic wrap or in a covered container. The dough is pretty sticky but making ahead should be okay. You could even lay them on the baking pan.
