Vegetable Samosas, perfect weekend snack with chai or appetizer for dinner. it’s nice and crispy and very flavourful.
INGREDIENTS:
Frozen vegetables
1 small onion finely chopped
few curry leaves cut into tiny pieces
1 tsp salt
1 tsp garlic-green chilli paste
1 tsp crushed cumin seeds
1 tsp mustard seeds/rai
1/2 tsp turmeric
handful chopped coriander leaves
2 potatoes cubes and boiled or raw
2 tsp lemon juice
1 tbsp water
2 tbsp oil
Samosa Leaves (Home made or ready made, whichever you prefer)
I used mixed frozen vegetables that has carrots, peas, corn.
Put oil in a pan on medium, crackle mustard seeds, and add curry leaves, then sauté chopped onions until translucent. Add potatoes, vegetable and all the spices and 1 tbsp water, cover and turn heat to very low and let it simmer while the potatoes are getting cooked. When potatoes are done, add lemon juice, and handful coriander leaves. Let it cool completely. Then fill in your Samosa wraps, deep fry until golden brown on both sides, enjoy with chutney of your choice.
