Yum! Will definitely give this a go. I only recently discovered how well nuts and mushrooms go together. I find thay greens work really well with this combo, too. My new favorite quick pasta dish is to sauté mushrooms with in a little oil and add chopped pecans and a little nutmeg, then wilt some tender greens (I like mustard greens, but spinach works well, too) in the same pan. Finish off with some tahini and serve over wholemeal (whole wheat) pasta or buckwheat soba. Add a squeeze of lemon and/or some lemon zest just before serving. I can get this on the table in about 25 min if I use soba noodles, which is faster than stopping for takeaway (take out). Thanks for inspiring me to try to cook healthy meals every day!

The combination of the channa flour and yoghurt, over top of caramelized onions with toasted cashews ....makes such a creamy taste... like a delicious restaurant style shahi curry....I am thrilled to have tested this recipe and you yet again, introduced me to a new technique, thanks Chetna!

For example a day thatI have to work till 9 pm and need something light to eat that night? If you're vegan, simply make the cashew-onion-tomato wet masala and grind it to make a nice thick gravy. I also added a handful of extra cashew with the onions.
