The only thing that I cannot do Thanksgiving without is stuffing! Serious Eats vegan stuffing has been my go-to every year for many many years, but I'm always on the lookout for a truly amazing alternative.

I make my Mom’s stuffing with bells poultry seasoning. But I substitute the egg for a flax seed or chia seed egg. The flax seed works better imo. And I use veg stock and vegan butter. It is extremely similar. I actually like it better because it does not go so sludgy like the one with a real egg in it. I am always looking for new stuffings/dressings to try, I will check out Serious eats vegan stuffing. Thanks for mentioning it!

I am right there with you for all three and cranberry sauce is my vote for first also. I love cranberries so much that I also make a raw cranberry and orange relish (for lack of a better word). And if I make a mushroom and chestnut Wellington, I always throw in a handful or two of dehydrated cranberries that I plump back up with either orange juice or apple juice, but vegetable stock works great too. I could just eat the stuffing and cranberry sauce and relish for the entire meal lol.

The veggie casserole is almost exactly a fall harvest stuffing. I made that with cubed Schar's gluten free Ciabatta rolls and it was phenomenal.

You should try butternut Squash as your cheese sauce for the Mac and Cheese it works wonders and tastes delightful. It tasted better than the Potato and carrot in my opinion.

Must try your roasted vegetable casserole and cornbread. My favorite sides from thanksgiving have been sweet potato casserole, never with the marshmallows since I don’t care for them, cornbread dressing, and what we have here I’m Louisiana dirty rice. I’ve seriously wondered how I could recreate that dish vegan. Thought about using lentils with sausage seasonings. Hmm. Looks great and hope you have a wonderful Thanksgiving.

These are all so enticing, well shot and calmly narrated. I've added your book to my wishlist, and will be making that vegan mac & cheese. Traditionally, I"ve brought side dishes to omni family dinners, often picked from the NYT Vegetarian Thanksgiving archive (which isn't all vegan), my favorites being things like mushroom stew, roasted butternut squash and red onions, glazed roasted brussels sprouts (glazes with maple and pomegranate syrup both went down well). This year, I kept it a bit simple. Store-bought vegan roast, a faux gratin, and a first for me, learning how to bake simple breads in a dutch oven. Hasn't been a great year or week, but hopefully I'll have more energy next year. Also, your videos have totally sold me on a Caraway cookset, that my rational mind will never justify, as existing ugly cookware refuses to die. Ah well. I can appreciate cookware that looks like it belongs in a modern museum from afar.
