That is seasoning the chicken the Ghanaian way. You can also blend the onions, ginger, garlic etc and pour the blended sauce into the bowl with the chicken to boil or leave overnight if you are going to grill it.

Trudy, you can always avoid tearing your eyes with onions while cutting them by dipping them into water for like 5-10 minutes after peeling them. That way the onions always absorb water making them more succulent. Hope this helps. Cheers!

This is how we cook chicken in Nigeria too. First, we season it moderately and then boil it. Thereafter, you fry it depending on what you want. If you want crispy chicken, you coat it with flour then fry it.
