I was recently blessed with a fantastic harvest of pumpkins, or squash as you know it in other parts of the world. I grew my biggest ever pumpkin and rather than chop it up and share it, or just let it rot away I thought I would challenge myself to use it all.
In today's video thats what I plan to do. Join me for a week of pumpkin recipes and preserving the excess in the freezer.

slice thin, dehydrate and grind to a powder. store in a jar with a gasket. really great for soups and sauces.

Oh I was just reminded that we used to use mashed pumpkin in the Christmas cake as it kept it moist, lovely colour and of course hidden veg. And choc brownies too, mashed pumpkin in them 😂

You can hide it in heaps of things - so versatile! Choc pumpkin brownies sound good - mmm maybe choc pumpkin brownie chia pudding 🤔

Lol one pumpkin down. Yes I have soup and mash in the freezer. Yes when I cut into a pumpkin I usually give bits away as it's very hard to get through a whole one before it goes soft. Friends, family and neighbours don't mind =-) Take care.

Yes one down indeed - plenty to go! I’ll have to target families with the cut pieces who may be able to use them up quicker than single friends and family do!

Pumpkin bliss!! It's my favourite veg. Along with all the others. But it's really a fruit! So I would have to add Day #8, pumpkin pie. With its spices and eggs, it's a high protein dessert that can also make a meal in itself. A little honey or maole syrup to sweeten. Those seeds look huge. Americans roast them with salt, and snack on them. I could never work out how to deal with the seed hulls, but I think some people eat them too. That would be far more fibre than I need. Maybe a set of nail clippers kept exclusively for this purpose could extract the kernels easily! They are very high in protein, minerals and good oils.

When you put it like that I could have gone a pumpkin pie!! Thanks for the seeds idea - not sure I’ll follow through! I might just plant them all somewhere in my swales and see if any grow & if they do it would be interesting to see what kind of fruit they produce!

My sister gave me one of those monster pink pumpkins a few years back so I canned the whole thing. I ended up with many lovely jars on my pantry shelf. 🎃🎃🎃Great ideas to use up that pumpkin Linda.🙃😉😊

Some great ideas here Linda...I cut into one of my Jarrahdale pumps last night... it was 11.1kg and even with a family of 6 we hardly made a dent in it!! 🤪

Yes 11kg is a lot of pumpkin! A family of 6 would certainly help move through it a lot quicker than just my one! 😆

So many yum options for ONE pumpkin! Pumpkin and chickpea curry is always a favourite here. Chard is currently my abundant veg and the frittata looks divine. Chia pud! Who'd have thunk it 😂❤

Didn’t have any chickpeas otherwise I would have gone that one. The chia pudding was really good (with a bit of extra honey!!)

💚💚💚I dry these pumpkin seeds, and then lightly fry them in a frying pan, like regular sunflower seeds. Pumpkin seeds are incredibly tasty. You need to dry them in their skins, and when they are fried, you can peel and eat them.💚💚💚

The seeds can be washed to remove the stringy membrane, air dried and then roasted. Spiced or just salted makes a great snack or addition to salads.

Do you have to remove the outer layer or good to go with it??

@@huttonsvalleypermaculture Just separate the white seed from the moist orange pulp. You don't need to remove the seed outer skin.

Hard work that pumpkin cutting. I saw somewhere they just dropped it onto a hard concrete floor and it split in half! I will have to try it. Would be a lot easier. Lovely recipes and great harvest.

Thank you Linda. What a fun video. ❤ For added longevity, I was always taught to remove the seeds and flesh before storing cut pumpkin in the fridge. I wonder if there is anything in that. I see you didn't bother. My husband does a lovely pumpkin dish. He calls it autumn medley but it actually has more than 3 ingredients. Roast off bites sized pieces of pumpkin with red onion, olives, capsicum, oregano and garlic. Add lots of salt and olive oil. We cook with butter and tallow a lot, but olive oil does taste better here. I also roast off pumpkin and have it in the fridge ready to add to lunchtime salads. It's particularly good with pumpkin seeds.

Oh thanks Natalie! I haven’t heard of storing that way but as I’ve plenty of pumpkin still I might do an experiment - some with seeds and some without & see which lasts longest! Your hubbys recipe sounds amazing - will definitely have to give that one a go! Thanks for watching!! 😊

What a beautiful pumpkin. It was huge . I love how creative you were with the meals , transforming one veg into completely different flavours and textures. Well done. I love leaving the seeds attached to each chunk of pumpkin when roasting, easy and delicious. Otherwise i fry them in a pan with s&p and spices for what Jackie French calls chew strew . Really yummy on veg or salads too. Korma roast pumpkin is great. I have to agree with pumpkin pie , i make a paleo one that is absolutely our favourite. Have you seen Jackie Frenchs pumpkin book ? Its even got a recipe to use a pumpkin as a camp oven , put the stew in the cavity and i loved it , the kids thought it was great fun. I have a spare book , would you like it? Thanks for sharing lovely ❤❤

I know your kitchen must have smelled wonderful, particularly as you cooked the curry dishes. I have a question about the frittata--you said something about the eggs you had preserved. I wasn't sure what you meant; can you elaborate on that a bit?

I preserve excess eggs in a hydrated lime solution - check out my video ‘Preserving Eggs - a solution to an abundance problem’ for exactly how I do it! Thanks for prompting me to make this video and of course helping me make the most of that big pumpkin 🎃

@@huttonsvalleypermaculture I get unwashed eggs from my farmers' market and preserve in lime water. I have used some that were 18 months old. I loved all your recipes; I know this was a lot of camera & editing work for you. Thank you for doing it and I appreciate the inspiration, especially the dairy substitutions.
