Sonic doing the Family Guy death pose a lot is probably due to The Murder of Sonic the Hedgehog. Sonic is drawn in that pose in the game. The fact he did it in some "offical" capacity likely made it common in memes.

From what I remember, the animator that made the short got into some pretty bad controversy. Don't remember what it was exactly. Not much of value was really lost. The short wasn't even funny anyways.

Honestly, i have to disagreed with you. Infinite is NOT really the worst Sonic character but i do think Sage and every Sonic Frontiers character are actually one of the WORST Sonic characters and they're just terrible. And let's not forget that i absolutely HATE Sonic Frontiers, i hated Sonic Frontiers so much, i hated Sonic Frontiers with a passion.
