After investing in a 430 C electric pizza oven, and implementing some of the things I learned on this channel I quit going to local pizzerias. It's very few places that actually have a clue about what they are doing, unfortunately. The bari style looks delicious, but nothing beats the Neapolitan. When thinking about it, the Bari style looks closer to how many people view Italian pizza. "Thin and crispy" is all I hear people say. My answer is: Depends on the region you visit!

As Italian I can tell the reason why people thinking all pizzeria in Italy have the thin and crispy. ‘Cause in the big cities( except Naples) every pizzeria had the thin and crispy. All pizza chef now( at least the 90%) make the pizza napoletana cause is becoming famous in the last 10/15 years, now in the north there’s more pizzeria with Neapolitan pizza than Naples😂😂. But before that in the north( where I from) pizza chef who made Neapolitan pizza were a rarity, as the Neapolitan pizza chef didnt emigrate( and the association of Neapolitan pizza chef were jealous of that kind of pizza😂😂) to other regions and the locals did a similar to that seen in the video, and with that I grew. Now it is the opposite!! I think that making the Neapolitan one has become a fashion and there is this false myth that if you make it thin and slightly more crunchy no one comes and eat your pizza.

Watching your dad make the individual pizza dough ball as he pulled the dough amout of the bulk piece cause me to reflect on the years of experience as he form each one. To think of the thousands of pizza those hands made. And from those hands to now yours you carry the history of making pizza. The greatest gift can Father can do is pass on his knowledge, understanding and wisdom of what made him the father that birthed and was raised by passing it on to you to pass on to you children. Thus the memory of family history and traditions is passed on generation to generations. I know he enjoyed very much making pizza with you at that event it is a memory he will never forget, sharing his passion with you and seeing you carry that passion into the future, while passing it on to all who watch you.
