It's like the episode of your favorite TV show that decides to go backwards, starting with the aftermath, and do the "two hours earlier" cuts for each scene. Oh Hannah, 7:46 - 8:20 made me laugh so so hard! I've made croissants from scratch and it is not easy. But you did a great job for your first time! Tip: Soften the butter a bit and put it in a food processor to make it smooth. Then dump it out onto parchment paper. Way easier to roll out into a square that way. Much love from a baking student!

*CROISSANTS MADE ME GO TO THERAPY* There were a time in my life when i baked at night to avoid all my thoughts and anxiety i got surrounded by when in bed. So every baking night the goal was to tire myself out to the point of bed-collapses and no dreams, no thoughts. The first mission was to make the perfect substitute macaron, since my family and I are allergic as fuuukk to almonds. This took me a good two weeks of trials and errors, but in the end I DID IT and they were delicious. So after slow nightly success after slow nightly success, I decided the next one was going to be The Croissant. The Croissant. The Nightmare. The reason the French drink wine and settles for the baguette instead. After the forming and freezing of the butter and dough, the fitting of the butter in the dough and the rolling x 50 of the dough, the freezing of the dough for another 30 minutes, and again with the rolling x50 clockwise, and the freezing and the rolling and freezing and rolling and freezing. Sometime around here I was starting to realise that maybe - just maybe, I'd chewed off more than I could swallow. But there were just the forming and freezing of the darned things left before THE EGGWASH and putting them into the waiting oven. I looked at the clock, 04:34 am and the Swedish summer night-sun were just starting to shift into morning sun. So I formed the croissants into somewhat croissant-shapes, counted the fucking layers of butters again, shoved them into the freezer for their last 30 minutes, made myself some instant noodles and refilled my coffee mug. I had just started to think about why I was sitting here, what I was doing with my life, why I felt so anxious all the time... when the timer went off. Out the freezer, egg wash, and into the oven with a mix of threats and prayers. I topped off my coffee again and sat down in front of the oven with last week's night-bake success; a perfectly soft but chewy and crumbly toffee-lingonberry cookie. Looking into the oven I could already tell that they were too brown. And they were shrinking. I realised that I hate croissants and would never make them again. After taking them out and letting them cool off I put them on a nice tray for my family to wake up to. I didn't even want to taste the bastards. The time was 06.30 am when I wrote a note to my mom telling her about my traumatic evening and night, and not to wake me before twelve, please. As i was turning all the lights off I gave in and took a bite of the best looking croissants. I put it back, turned off the last lamp and finally went to bed. The next day I called my doctor to book an appointment with a therapist. I haven't night-baked ever since.

Awwww. I'm sorry you had a hard time with crescents. Bread is fun to make, it also makes fabulous pizza dough, but the ratio's are different. (Red Star Yeast - Pizza Dough is my favorite recipe but it makes a lot of dough, I use Instructables - How To Make Bread without a Machine - recipe.) Tip, mix the salt with the flour as it will kill the yeast. Provided if you touch yeast bread again lol.
