One word of advice, get BWT water. If you have a water filtration system in the house, usually it is a water softener that uses salt. The systems use sodium to displace calcium to soften the water. An ideal level of softness is in between 100 and 150ppm. A BWT system uses magnesium to displace calcium. This produces better tasting hot drinks. You need to get a water test kit to see where you stand as a starting point. If your whole house is filtered and you are not going to plumb in the machine, then get a BWT penguin pitcher. I plumbed in my machine, but the cost was about $600 and I did the labor myself. Since I had measured the water, I knew that my region averaged about 125ppm. On the city websitem they stated the water was at 125ppm. I bought a meter from Amazon that measured my water at125ppm. A BWT penguin reduced that to 100ppm. As a side note the hot water from my water tank was 400ppm. Full of impurities in comparison to the cold water. The tank was 1 month old at the time. If you use BWT water, you will never have to descale the machine. Only backflush it. Taste wise it walks all over a Brita because it is actually changing something. DO NOT use reverse osmosis water or zero water. Water when beneath 100ppm begins to become corrosive. If you put pure water into a boiler and heat it up, it will leach minerals from the boiler itself trying to reach an equilibrium. This will pit the boilers and cause leaking. I'm 11 years in on my journey. My original machine and grinder are still alive. This January, I bought a Rocket Giotto Evoluzione Cronometro R with a rotary pump. The ECM doesn't fit under my cabinets. The ECM flow control valve pretty much fits any E-61 machine, so I will install one on my machine.

If you found a single boiler machine with a heat exchanger, you can steam and pull the shot at the same time with no problems. My wife and I have a Lelit Mara which has an amazing E-61 group and a heat exchanger and it’s wonderful.

The problem with HX is temperature consistency. Having one with PID helps but dual boiler is still ideal, if you have the money and space there's no reason to get HX over DB.

@@kirbyallison Tell me about it. I started my journey a few weeks ago with a la pavoni professional and an accompanying eureka mignon mci grinder. Since then I've grinded myself through at least 2 kg of coffee and went through all stages of grieve. But when you get it all right (or whatever you call right as a beginner), the result is so rewarding. Mastering a truly mechanical machine and figuring out its specific quirks is so much fun. Making good coffee really is a journey and worth every step. And James Hoffman definitely is one of the best tour guides you can get. Enjoy your ECM, you've got yourself a well built, handcrafted machine and a sweet E61 brewing group.

That looks like an amazing machine. Once you get to play with he machine and find your right beans, you'll be set. For my suggestion: you will also need access to some ice and an aerator for cold milk. From my understanding Texas has a similar weather pattern to my home town and we love our Iced Coffees - so much so that they are our go-to as the drink of choice during the warmer months (all 10 of them). Simple recipe: Crush the ice, place it in a tall (high ball is good) glass, add the coffee shot, then the frothed chilled milk - use a knife to pour the milk in, then add a serve of froth to the top. IF you're a sugar type guy, add the sugar to the glass after the ice. Trust me, we love our coffee so much here, we kicked out that US Coffee chain. Have fun. I hope you and your family are safe.

This machine is of the highest quality and is beautiful. I could not pull the trigger since it is not Italian designed but is manufactured in Italy. Mine has to be Italian or I just could not buy it. I know that is petty, idiotic and senseless, but mine had to be Italian designed and manufactured with a direct history to the production of espresso in Italy. That's just the way I roll. Do the research on Vibiemme (VBM) and you will see why I bought a double boiler, PID, rotary pump VBM machine which has a direct history to the invention of the original E61 group-head and is built like a tank; industrial quality. Now when I sip my , I believe very delicious espresso (who knows it's so subjective) it actually tastes like heaven to me since the lineage of making espresso is directly linked to the design of my machine. To each his own and that's my story of how I have always approached buying quality items in my life. Enjoy it, it's sublime and most of all have fun!!

Agree entirely. I always carry a Victorinox Escort swiss army knife. The smallest they make with one sharp blade, nail file with screw driver tip and tweezers. It's small enough not to show through the lining.

Terrific machine for typical daily use. I had one for a few months, and it worked great until I used it for parties and brewed back to back shots and steamed milk. I ended up getting a 220V Dalla Corte Mina and it’s beyond amazing. I was always a huge La Cimbali fan and they make a classic style machine of similar size, but it’s not as adjustable as we like. What’s nice about mine also is being able to use the app to profile and automatically adjust flow to match shots I enjoyed that I pulled manually previously. I know it’s a whole different league machine, but it’s always nice to have a “dream machine” to look forward to. For me, it’s a Victoria Arduino, the brand used in the World Barista Championships, just a version wIth less group heads. Anyway, haven’t had a chance to watch your other videos yet, but looks like a great channel. I always enjoy a fellow gentleman who appreciates the quality and art found in quality items. You should consider a video on Bertazzoni suits/shirts and Barbour jackets, both iconic menswear brands. AND last but certainly shouldn’t be least is Miele washing machines. I have a 25 year old Novotronic that has never had a single issue and can boil/wash if needed. I just got their new W1 washer and T1 internal heat pump dryer. The washer is their top tier W1 with automatic detergent dosing and a proprietary pod system for specific fabric tasks, my favorite being the proofing pod and specific cycle designed to keep skiwear waterproof, but I use it for things like tablecloths and things like red wine just bead right off. You can adjust every aspect of the machine via an app. They have a patented honecomb drum so clothing never actually touches the metal drum, just floats on a thin layer of water. The washer and dryer communicate and for ideal finish. The T1 is a new concept. It’s not like the old condenser internally venting dryers often in european apartments. It uses a heat pump style system to recirculate the internal air. It uses 50% less energy as well compared to a traditional dryer. I have measured the energy draw between my 2 dryers and it’s even leas than half.

Oh, forgot to mention, I just had a triple filter RO system installed. The last filter has around 10 options and one is commonly used by high-end coffee shops for remineralization, to prevent machine damage from RO water, and provides enough electrolytes so that the water level indicator in higher end machines will be able to read level.

Oh, and a gentleman must always own a Leica M Series camera. I prefer the M6, their second to last film camera. The class of owning/using a Leica is using it for so long your fingers automatically make adjustments without your attention and it never goes out of style, crashes, hardly ever needs a battery change, ages with time, and while I am partial to my own leathergoods (Hunt Valley Leatherworks), their higher-end leather straps are gorgeous, yet simple.

Why did you have to wait for it to be built? They are stocked in lots of places. Get rid of that grinder and get something designed for single dosing. On the higher end look at Ceado E5SD or E37SD. I made the same mistake but single dosing with a hopper grinder is a disaster.

Russian reindeer is great, and molds extremely well, however breaks down easily, so I would only recommend them if you have a large shoe collection and wear them only occasionally and carefully. Genuine Shell Cordovan, most commonly produced by Horween Tannery here in the US, is not only the epitome of dress shoe materials, but also extremely well wearing and develops a patina rather than breaking down with minimal care. I own a leather products company and use it for many items including custom belts, watch straps, and strops for straight razors. For daily use, we make wallets, passport cases, attaches out of their Chromexcel, which is tanned with so much fat and oils, most scuffs from normal use buff out with your finger or soft cloth. It is also terrific for our custom fly fishing, hunting, travel, bags and gear prone to heavy use and water exposure.

You shouldn't push the cardboard box directly touching the nice wood floor, lift one end of it and stuff a blanket or some other soft material under it, then go to the other end and lift it a little bit so you can pull out the blanket on that side and when cardboard box is standing on only the blanket you can push it without risking to scratch the floor. And yes I am pedantic or as I prefer to call it I'm thoughtful before acting. Do the same repositioning furniture, a blanket under the feets of whatever you repositioning and you never leave bad scratches on the surface.

Came here for the Synchronika, but was struck by the sparse interior furnishings. What items do exist, appear to be well-made items. Not of the typical Ikea ilk. This here ladies and gents, is a smart man. Not practical to a sterile fault, however. Just wise beyond his years in understanding the importance of purchasing quality items. They are, in fact, less expensive in the long run and a pleasure to experience. Much like a good woman.

Fiji bottled makes the best espresso until you install a filtration system with a remineralization/electrolyte cartridge in the last stage. Pure RO water will damage the machine, lose flavor in the espresso, and even cause problems with water level sensors not reading level.

HI Olivier, apologies for the slow response. I have only just seen this comment! Not sure how it slipped past me. Firstly, thank you for bringing this to my attention. It is very sad to see this being written on Valmour's website, and is something I intend to take up with them urgently. I would also add that it s categorically untrue that the products are lower in standard. Any damage that Valmour has experienced has been solely function of damage in transit. We obviously have quality control measures in place here in Texas, so when we receive hangers from the factory, they are all checked. The hangers themselves continue to be the best standard for protecting people's garments, and I would encourage you to try them and see the benefits for yourself. If you do have to order through Valmour, please let me know directly if you have any issues.

I have a Niche 0 Grinder. After going through my fair share from Rocket Faustinos, etc. Niche 0 is so far the best. Low temperature interruption to the final grind and virtually 0 retention in the burrs.

@@eviesyd: It's a good investment. The only issue with Niche, really, is the clean up. I'm used to handling mechanical units (disassembling and reassembling), but to most, it's a nightmare. But for me, I'm happy. The Rocket in general makes excellent machines. The R58 is beautiful though, probably one of their best yet. I like how they've decided to try and compete with decent by adding on an additional shot timer and a digital control. For my next machine though, I may go old school, like my buddy, and get a Olympia. Something about pushing a shot yourself feels appealing. I say that now, haha.

I have destroyed numerous espresso machines over the decades of thinking oh just use filtered water. I would never treat it. Just buy distilled cleaner cup and never any sort of scaling or eating your boiler, portafilter, hardware.

Distilled water has no minerals and is slightly acidic, when boiled it's going to leach some metals out of the boiler and cause the opposite problem of scaling, it's going to cause corrosion over time. Also coffee and tea usually turns out gross and flat / acidic tasting as a result. He mentioned that in the video, looks like dude's done his research. Reverse osmosis is similar, if it's working right it should have almost no minerals, some systems have a alkalizing or reminerlizing filter media to add some minerals back which could work. There's coffee / espresso oriented filters like BWT ones that take out calcium and replace it with magnesium.

My wife did better , she picked up a month ago an almost new $1,400. commercial office Lavazzia machine at a thrift store in Florida for $15. ,yes it was $20. and she got a discount of25%.
