Yum. I have no idea where I would find ube extract in Georgia! But I recall the deliciousness of Filipino food in San Diego when I was a Navy kid. Lots of Filipino Navy kids were my friends in the 1960s.

There was no better compliment than my mother in law (who is very strict with herself about calorie consumption and exercise) throwing caution to the wind when I made a dish that took all day. She didn't count calories that night, sis congratulated me on such an achievement.

Literally the best feeling. I made really good spinach dip one day and brought it to a party. It was demolished, the only thing there that everyone fought over. I love feeding people good food!

I'm from Spain and here we have another traditional bread called Ensaimada, I was curious if your ensaymada was somehow similar to what I know. And it is, The og recipe is the one I know from Spain, Mallorca more specifically, and it derived into your ensaymadas during the time when Filipines were a spanish colony... the more you know

​@@ellur15its like a bread but instead of regular flour they use rice flour. the bread its self is surpricingly light and has a sweeter side on it but and for the topping they use magarine, salted duck egg (optional but highly recomemded) sugar and coconut shreds.

In Latin America we call ensaimada bread “pan de mallorca” or “ensaimada” depending on the region and country. We don’t spell it with the “y” so it’s super cool to see that the Philippines does

yes! It is a traditional pastry here in Spain, that's why "pan de mallorca" (mallorca is an island inside spanish' balearic region)

@@hymph7357are you a filipino IN the Philippines? I’ve only ever seen it sold as ensaYmada. Never with an i. And I’m a Filipino that has lived in more than 10 different provinces. Not to mention travelled extensively all over the Philippines.

For the ensaimadas is more common in a "snail shell" or "cinnamon roll" form but you can find them in this way too. They are from Spain from on an island named Mallorca ☺️

We know where they’re from, the Philippines was colonized by Spain… 🙄 and you don’t get to tell us how we use the things that the colonizers gave us. It doesn’t matter what shape or form the bread is in, as long as it’s Filipino.

Don’t call every Spanish person a colonizer, but also know that a few Filipino dishes (this goes for any country that was colonized rlly) was heavily inspired by their colonizers food, that’s ok, if we could go back a few hundred years to change what happened, we would.

I once was looking for ice cream and I found a truck but it was a Philippine food truck and I decided to try it. The lady selling the food recommended me the same dish you make and I was really sceptical about it. I tried it and absolutely loved it!!! 💯 recommend

enseymada is my fave snack. my grandma used to buy lots of it from a local bakery. now whenever i smell a freshbaked enseymada, it reminds me of my time staying over my grandma's house during summer vacations

It's an enriched dough. Some versions will have more butter spread on it before it's shaped, kinda like laminated dough without the multiple turns. After baking brush with butter and dip in sugar. Top with grated cheddar or edam.

@@algrand52 Thanks for that unwarranted opinion about someone you don't know. It's vaguely sweet bread with butter and cheese (and optionally salted egg). Not everyone likes that particular flavor combination. Even if your family baked it I'd have the same reaction. A half smile as I threw it into the trash.

As a side note, I'm guessing this bread originated from the Spanish, as Ensaïmada is a spiral shaped sweet dough made in the island of Mallorca using pork lard. Saim means lard in the Mallorcan dialect of Catalan.
