Oh I assure you I'm Polish and tomato ketchup is VERY traditional for zapiekanka plain mayo or garlic mayo are also popular choices some places even put crispy onions on top.

You can add kiełbasa, you can add whatever you want, actually, but the classic vegetarian version is the best, adding anything else is unnecessary. And if you don't like gouda, you can use any other yellow cheese

In Moscow where I'm from запиканка is a sweet souffle-like dessert made from cottage cheese, I think. If you're ever unsure about what's in a russian dish, it's probably cottage cheese.

There is another way too, shred the cheese along with mushrooms, and get bread roll halves on freezer, then spread some butter on it and shred the cheese along with mushrooms as I said and put them on bread rolls. Then grill them on top heated grill, the one you can get in Poland and they have heaters on top and are open, the small heaters they used in vendors. Use ketchup, in Warsaw they mostly used Krzepki Radek or Słodka Ania ketchups, i HIGHLY reccomend them if you can get them in Polish store at your place.
