Base Saag Recipe: Ingredients: * 3 tablespoons of ghee * 1 teaspoon of whole coriander * 1 teaspoon of whole cumin * 1 teaspoon of whole cardamom * 1 dried chili * 1 large onion, slice * Chopped garlic and ginger (about 1 tablespoon each) * Salt to taste * 2 cups of spinach * 1 cup of Kale * 1 cup of Swiss Chard * 1/2 cup of Arugula Instructions: 1. Put a large pot on medium heat and melt the ghee. 2. Add in the spices & dried chili and cook until fragrant. 3. Add in the sliced onion, cook for another 2 - 3 minutes. 4. Add in the chopped ginger, garlic and salt. Cook for another 10 minutes until translucent and soft. 5. Then cook the greens in 2 batches. Place half the greens in the pot and cover with a lid for 2 minutes. 6. Once the greens have wilted add the second batch of greens and cover for another 2-3 minutes. 7. Transfer everything to a blender and pulse until you have a consistency you like. 8. Pour the base saag evenly into 4 freeze safe container and store in the freezer until you are ready to use. Chickpea & Paneer Saag Recipe: Ingredients: * 1 container of saag base (approx. 2 cups) * 1/2 cup of coconut milk * 1 can of chickpeas * 1/2 cup of cubed paneer cheese Instructions: 1. Put 2 cups of base saag into a pot along with coconut milk. Heat on medium low and mix until combined. 2. Add in 1 can of chickpeas and 1/2 cup of cubed paneer cheese and cook for 2 - 3 minutes or until everything is well heated. 3. Serve over rice and enjoy! You can make ghee from just melting butter and clarifying it so it could be cheaper and you control what to do with it

Good for you that this video didn't reach Pushpak or alot of Indian audience or they would have roasted you for the lack of mustard leaves(sarson ka saag) which is the main ingredient of "Indian saag". My lack of knowledge of kale, swiss chard and arugula local names made me look it up and they definitely are not the same as mustard leaves. Google. Don't know if im wrong on that.
