Next time put water in the container before peeling the potatoes. That way mud doesn't stick on them. I think a quarter of every potato went with the peels 😂😂😂. Its reminds me of ny mother who used to scream that we were wasting too much. But its ok. From ugali in US to mukimo in Meru. You will soon be an expert in African dishes.

Mekenze you're doing just fine 😊 that was a good first time. I saw that you've plenty of pumpkin leaves, try using them next time with sweet corn, green peas and potatoes. They are the best for making mukimo...pick the tender leaves though.

Tip for cutting onions so as they don't make your eyes watery, before you cut them just peel off the skin then soak them into salty water for five minutes, works wonders

Mukimo is a Kikuyu traditional dish. U made me laugh when u said a million potatoes. And the ancestors do good 😊. And did u know u can just steam cabbage as a side? That’s what I do here as I’m not a lover of meat. Good start job👍🏾

It was ok to add salt after potatoes get cooked, it tastes better Try spring onions next time instead of red onions, it tastes heavenly Good job mrs George

This recipe is a definite try for me. Mash potatoes is a comfort food for me! I am sure I will love mukimo. Found stingy nettle powder on Amazon. Since I am vegan and a lover of onions, I will make an onion gravy to eat with the mukimo. Also found nettle seeds on Amazon, so just maybe I will try growing in a pot. Thank you much for sharing this recipe. I need all the medicinal help the nettle leaf provides!🤣. The food looked really tasty! Blessings and kudos to your cooking adventures!!!❤👩🏻‍🍳🥰

Try using a potato/vegetable peeler. It makes peeling easier ( my experience), and you won't chop off too much of what you are peel.

Congratulations Mekenze.the mukimo looked delicious together with the mushroom beef stew.some tips while peeling the potatoes kindly add some water in the container,makes cleaning easier n they dont stain alot.also you can try mukimo with green peas n sweet corn,its a nice combo n adds to the flavor.(You pre boil the green peas n sweet corn seperately n once the potatoes start boining ,then you add them n let them cook until the potatoes are soft.)

For the onion burn...halfbite a matchstick in your mouth,with the red side facing the onion,,,,or half bite a slice of bread...it will work😅I don't know the science behind it though

Your mukimo needed more green and was ABIT dry.also when mashing press the potato on the side of the pot with the flat part of the wooden spoon.job well done on the stew

Hey.. many options here.. all good. Another tip - steam a small bunch of pumpkin leaves or whichever greens one is using, blend & use. Works everytime for all variations of mukimo. Any left over blended greens can be frozen for next mukimo...

I would like to try that food. Might try cooking it myself. I'm an American married to a Kenyan lady. My wife has taught me how to cook Kenyan food. We have never eaten stinging knettle.

For potatoes, a peeler was a game changer for me! Also, Mukimo with Peas is pretty good. I also would recommend fresh stinging nettle leaves instead of the powder. There is adventure in picking them, but the taste is unbeatable.

As for the onion cutting.... Lay a wet washcloth close to the onion you're cutting. It will take the burning from your eyes. There's a compound released that goes for moisture. that's why the eyes are targeted. Also cleaning up the root of the onion but not cutting it off, can help to reduce the compound released. 😊

That was really good Mekenzie. You can play around wth the recipe by adding green soft corn or sweetcorn as you said, green peas or even boiled beans.

In the USA and I enjoy mukimo when I miss it thanks to Indian stores that sell stuff I need. I was laughing so hard when you were cutting onions😂 I too I cut them with eyes closed and hope for the best😂 thank you for the video!

Mekenzie I am laughing at George when he acts the way you wanted him to, I have Avocado envy in the.northeast we get Hass or.fla avocados I only buy Fla avocados if I am having company they are so.large,the one s you have would last me.prob 3 or 4 meals,I like shatake mushrooms especially when they are made unto a.mushroom burger, I also like chanterelles cooked with onions , question do they only have red onions in Kenya or are they a favorite for cooking over white and yellow, thanks for sharing you reminded me of when I first starting cooking when I was a newly Wed lots of burnt dishes never had to cook growing up but practice makes perfect and experience is a great teacher keep up the good work

You can cut the onions in half and deep in the water for about five minutes to avoid the effect when cutting.

When serving mukimo try to mix with butter, then have some kachumbari and avocado sides.

Wow!....this is good! Learning to cook our African food 👏👏👏.....but let me teach a new way and easy and will give you that green out come results.....just buy the fresh stinging nettles or pumpkin leaves or kahurura,,they resemble the pumpkin leaves and I can see you have them in your garden ,wash and boil till tender,then blend with your blender,add the blended mixture to your potatoes and it will give you a great taste and the green colour.....👍

Great job! I could virtually taste it far away in my neck of the woods. Potato peelers might help speed things up relative to knife skills. The knife approach could hurt. Check online for techniques for preventing onion stings in eyes.

According to Koree, of the Sylvia and Koree channel in Kenya, place a wet towel near when you're cutting onions and it won't burn your eyes. Your food looked delicious❤😊!

I learned from a cooking channel that onions only burn your eyes if you cut the hard bottom part. If you wedge & remove that part off, you will never tear from onions.

Hi mekenze mukimo looks good but to avoid crying while cutting onions put any metal between your teeth on your mouth, like a small spoon, it works👍

Theres a lady called "farmer on fire" she sells ready mushroom bags that you cam keep in your kitchen and they sprout every so often,that way you get mushrooms to eat every once often.

In my Honest opinion, the Mukimo was half-cooked. You did not boil the herbs (Green stuff), which need to be cooked as well, but the rest was perfect. Congratulations, Makenzie.

From the directions I read online, it said to add the powder once the potatoes were fully cooked and mostly drained so I tried it that way ☺️

You only boil if it's the actual leaves just to soften it up for mashing up but you can see she used the powder. She did it the correct way lol
