Love your Thai street food content. I am a Vietnamese American living in Thailand the last 17 years so I was looking forward to your Saigon street food. I understand why you compare it to Thai food, but I believe it cheapens the experience and the food. When you talk about Thai food, you speak to it for what it is without comparison to other cuisine, which makes it enjoyable. Vietnamese food is amazing and is worthy to be critiqued on its on without having to be compared to other cuisine. Keep the content coming Gary!

Yeah I get that completely Tuan. Hopefully you’ll like my other three videos more, once I’d warmed up a bit. 50 percent of my audience are Thai so I’m just letting them know a little history of where they’re food comes from (like with the banh canh) and also that they can definitely enjoy Vietnamese food when they come here. Of course Vietnamese food deserves to be critiqued on its own but I’d literally just got off the plane and started filming so I definitely didn’t want to pretend to be an expert. I said Vietnam do better soups than Thailand so I’d anything, my Thai viewers should be annoyed 😂 I definitely wasn’t trying to offend anyone Tuan 🙏

I live off the grid in the US and feel alive and comfy when I am out of the built Western world. It's so delightful to run into kindred spirits like you on KZbin. It's not my preferred way to meet people, but there is a thread that must run through us all. I'm looking to find a new career path. I'd love to live my next years to continue traveling, but I have to say, it's been a a great ride to live in the mountains and woods here as a field biologist in the wilderness while also getting to see the world through professional conferences. Last year was Costa Rica and before then was Brussels through Iceland (campervan), but honestly, visiting the outer banks of the US would probably more exotic. That's where the next meeting is.

BUN RIEU (Boon Real) is originally from the north and not eaten with blood cake. To me I cant eat it.. and dont understand why ppl like to add it to many noodles. But love the fried tofu and Gio tai (meat cake).. cooked with DAM BONG (a by product from the process of making vinegar)(northern style) (the flavor is incredible). Btw you promounced Mam Tom so well.

the Bun Thit Nuong place is my favourite too!!, used to work just around the corner, a little pricier than your usual BTN but the quality of the spring roll ( which on its own is 30k each! ) will be what you would usually pay for a BTN in most districts outside of d1 on its own, haha, but that and the beautifully grilled meat makes up for it, definitely get what you pay for 👍

I always say Thai food is my favorite food country (curries), but some of my favorite dishes are Vietnamese. Bún is perhaps one of the most perfect dishes possible IMHO...all those herbs, and the sauce..yum!

12:43 It's not cassava that they put in the egg rolls, it's taro I think. I don't know any other cuisine in Asia that uses taro in egg rolls and that's why Vietnamese egg rolls taste the best to me, because of this one ingredient. Taro ads a lot of flavor, body, texture and creaminess to the egg rolls.

Usually vietnamese spring rolls contain khoai Mo^n (taro) and cu sa('n (jacema) which you've forgot to mention. These ingredients set vietnamese spring rolls apart from chinese.

The shrimp paste is potent 🤣 takes a special kind of person to enjoy it. I’m Vietnamese and even shrimp paste scares me. Generally if you put it in the broth though it basically just melts in and a tiny tiny bit is good to give the umami.

So many different kinds of 'kapi' here in Thailand. They all vary in flavour, colour and texture. Would really be interesting to taste the Vietnamese shrimp paste one day.
