This looks wonderful! The horse meat noodle I’m a little wary of-in Western culture, horse isn’t one of the normally eaten proteins. When it’s eaten in Western literature (as in Christopher Moore’s “Fool”) it’s a “protein of last resort” in that the characters’ rations are too low to continue, so it’s eat what can be eaten or die from starvation.

Taro/yam paste is actually a very traditional Teochew / Chaoshan dessert as well; sometimes we add coconut milk (not so much as in the video but just a bit), and instead of lotus seeds we use gingko nuts. Pumpkin paste is sometimes added into the mix as well, and traditionally the taro/yam paste is fried in pork lard before it is served warm or hot (lard sounds strange in a dessert but it is actually very good and a common practice in some traditional Chinese desserts/pastries).

Amazing video as always Amy! Would you please do your next video about Guilin's amazing scenery and a little bit about the city's history? I visited Guilin 32 years ago, and I'm sure a lot has changed.

My goodness I miss Guilin rice noodles. I grew up in Guangzhou eating it almost everyday. I’ve been to Yangshuo and Guilin. Beautiful and very scenic. ❤

I visited Guilin with a friend N years ago. I stayed there for 3 days and had Guilin mifen for breakfast, lunch and dinner and never got sick of it. Your vlog really brought the memory back😋😋😋. I miss Guilin mifen so much! I wish I can have it in Melbourne someday.🙏🙏🙏

@Blondie in China - Whilst you're in Guilin please consider visiting Liuzhou City, it's about an hour by road or even quicker by train from Guilin. It has one of the best night-views in China, it's a spectacular place, some of the best riverside green park areas that you'll find, - and has even more variety of noodles than Guilin does believe it or not , it's also one of the key motor-manufacturing cities in China, is about as green and clean as a Chinese city gets (scores in the top for water quality) , it's unique in so many aspects and deserves showcasing i.m.o. it's simply a super interesting place to go visit!!

You are right about Chinese being a tonal language. My husband is from Guangdong, I can speak baby Cantonese. Tsi gung and chi gung ( my interpretation of how they are phonetically spelt, and probably not correct ). A tissue and a spoon. I asked for a tissue….and got a spoon. Gwai, there’s like seven tones that mean different things but sound the bloody same to me - some are deeper toned, but I have a deep voice anyway!!! I am a gwai pau (ghost/white woman), this item is ho gwai (expensive), Fong hai gwai doe (put it there), I can’t remember the others, one is a cupboard I think.

Well done and so flavorful. Rice noodles are one of the tastiest and well-known foods in China. Guilin and Yangshuo are remarkable places to visit. The natural limestone scenery is famous. There is a night show of local performers with ethnic groups who use the River Li as a backdrop, and it is breathtaking to see. The songs, lights and blurring between a ‘stage’ and water itself are remarkable. Only thing to keep in mind is that local, Chinese audiences are not as quiet or considerate as those in the West. There will be smoking, chatter and loud noises in this show that can distract you, but if you concentrate on the show it is well worth the effort.❤

Thanks Amy and Jason for this Guilin noodles. Hmm, noodles served in dog bowls! Added my own sound effects when you were slurping in the noodles. The two little girls slurping noodles are cute. I have never seen crispy pork or BBQ pork slices do thin in Chinese food videos.
