Hey , it's a huge one you got, but not yet ripe, it was probably picked early to give it a longer shelf life (like a lot of fruits), which means that even when it'll turn yellow it won't be great, you need to find it when it's picked off the tree while yellow, even sweeter if it has a red-ish orange-ish color to it. As far as I know, there are 2 types of starfruit, sweet type and sour type. For the sour type, you have to wait for the fruit to ripe (it turns yellow) because obviously it's very sour when unripe. My family has the sweet type tree and even though the fruit is firm and green, it's still sweet!! The sour starfruit is perfect to make fish soup while the sweet one is eaten fresh, with some chili salt. Yum!
