Braised is my recommendation. It is definitely tougher than venison but much more mild. Makes the best stew I've had. BrIse the shanks tol they gall apart, add root vegetables like turnips, rutabaga, carrot, parsnips and onion. Typical seasonings like bay leaves, etc that you would typically use for roasts or stews. Incredible results! I render the fat to make lard, use it for high temp cooking, so brown the meat in the lard first to get the full experience.

I'm invested in your diet change, I hope it helps your MS symptoms. My father was diagnosed with MS and he continued with the same Standard American Diet, but he takes all the expensive prescribed medications. I don't have MS; however, I've had good results controlling type-II diabetes with whole foods, especially using ketosis and time-restricted eating. I subscribed and hope to see if a change in diet helps your symptoms and if your scans improve. Obviously, hard to tell with whether it's diet or medication with MS, but I'd like to hear your opinions, thoughts. No matter what, getting your own meat and sharing the experience with family is really rewarding.

Congrats on the bear! I've only had bear summer sausage, from someone else that brought it into work. Definitely a different taste to it. I prefered the venison over the bear, but it was still better than some sausage I've had!

We cook alot of bear meat in "Bear and Noodles ", Bear Stew, and Bear Stroganoff...excellent. Be careful and make sure you cook it to recommended temp to avoid Trichinosis, very common in Bears.

@@Northwoodslol, was looking for the trichinosis warning. Yes, it's real, but don't follow some people saying to cook to 180 or some other crazy temp. It's killed at 134 or 137 (don't remember) held for 5 minutes. Now, since it's a tougher meat, does well with low and slow, you are going to go well beyond those temps anyway, but if you try grilling a steak or are roasting a large piece, I'd just go to 145 internal to make sure there are no cold spots and let it rest a few minutes. Wow. Just...wow. Amazing how uninformed a fellow hunter can be. I'm sitting on a ground blind right now, hoping for a big bear to show, and I can tell you, the meat will all be used, the fat rendered and saved in mason jars, and the hide given to a friend to make Ren Fair apparel. The meat is very mild, no gaminess, better than venison in my opinion.
