Here in hyderabad there is a place called paradise is where the biryani got famous, locally it is called paradise biryani. But personally i have tasted better biryani in bawarchi (its a restaurant) and some places in old city near charminar. its time taking and lot of things goes into it. Real authentic biryani tastes much better with fresh spices, saffron, fried onions and right amount of ingredients, cooking timing and way of serving. Btw yogurt cools down spice level but first we eat with gravy(curry) in the end we mix yogurt.

You guys should try Thalassery Biriyani![kerala] ITS REALLY GOOD! There are different toppings on Biriyanis depending on the place I think . We put a lot of onions ,raisins, and sometimes pineapples, carrots etc. Also try Kethel Chicken! Its REALLY spicy and delicious![REN should try it out!XD]

Honestly every household has their own way of cooking biryani in southeast asia. And homemade biryani taste the best to me. Cooking biryani feels like an art, the blending of aromatic spices and fragrant mustard oil or ghee with the sweet fragrance of the rice is just something so beautiful. I love biryani with short grain rice like kalijira, gopalbhog or chinigura rice instead of long grain basmati rice more.

Actually the most famous original Hyderabadi Biriyani is Mutton / Chicken Biriyani. Fish started being recently used in Hyderabad to bring variety in biriyani cusine. Fish Biriyani is special cusine and very famous in Kolkata / Bangladesh prepared with the most sought after tasty fish Hilsa. It has unique taste. Kolkata biriyani has mutton and chicken variety also where every plate of biriyani has Potato and eggs too. That's speciality of Kolkata. The taste is very much different from Hyderabad, milder but has distinct taste and is very much loved food of Kolkata. Please try Kolkata biriyani nxt time.
