Greetings from Niš, Serbia. Buy fresh farm milk, not pasteurized. Cook it in a wide pan. Leave it to cool, a thin layer of fat from the milk will form on the surface. Collect only that layer without milk and put it in a bowl and add salt. That's your Kajmak. You can add herbs and spices to taste. If you have any more questions about Serbian food just ask. :)

It was really funny to me how your mother's reaction to kajmak was the same as mine. I had never heard about it before until moving to Serbia, and so I didn't expect much when I was offered it, just to be surprised with an amazing taste. Really, I've been living in Belgrade for over a year now and in all this time I doubt I've been a single day without either kajmak or ajvar. (also fun fact: I moved from São Paulo to here one week after you guys left Serbia and went to Brazil, which was when I found this channel)

I'm Serbian and I lived in Hungary for a year rarely coming home, things I missed the most is kajmak and our type of yogurt, when I came back I ate that for a week lol.

You should visit city of Niš and other places (Leskovac, Pirot and Vranje) on south of Serbia. Because food is there best in Serbia.

@@dejanstanojevic6484 I visited Niš already and I absolutely loved it! Best roštilj I ever had, hands down. Also the Roman ruins in the Niš Fortress were really cool too, and I plan to come back there to visit Medijana too. Leskovac and Pirot are also in my list since I have friends from these cities, but I've only passed by Vranje when I was in the road to go to Skopje. I'll add that to my list too, thanks!

Hey Steve, thank you for promoting Serbian food and our culture. I am Serbian (from Belgrade), but living in Canada 17 years (Etobicoke). Starsky is Polish store with some Serbian products. There are plenty of Serbian stores in Etobicoke and Mississauga. Cheers and it's a big pleasure for me personally when I see my Canadians enjoy Serbian food.....have a good time in Pakistan, congrats for you guys get married and visit Serbia again.

@@benjii324 I tried them in Bosnia. Taste the same. I don't know why some people keep making separations. It is all ex Yugoslavia so...every country I've been to in the Balkans people were really nice and behaved equally well towards me😍

Serbian food is delicious. Many Serbs in Canada often make an imitation kajmak which is good as well. Mousaka is also delicious and quite different from the Greek one, again much simpler. Make sure you buy some vegeta spice because you can’t make any Serbian food without it. Love your Mom , her voice is like Jan Arden’s she is so great on your channel she makes it real. Love you Mom

Karadordeva snicla je bila mrak to bi mogo jest svaki dan. Ujak mi zivi U dedinje Pa cesto ih posjetimo. A zena mu radi najbolje ustipke na svijetu

@@Humbulla93, dobro meso može da se nadje u turskim prodavnicama, a za svinjetinu idem direktno kod seljaka. :) Medjutim, mleko me baš zajebava, a i kad ga nadjem, kao da kupujem one koktele sa listićima zlata unutra! 😂 A što se tiče kajmaka, sledeći put navrati u užički kraj (Zlatiborski okrug), pa da vidiš šta su mlečni proizvodi! :) Npr. kajmak iz Bajine Bašte, a sir iz Prijepolja! 🤯😁

Don't know where are you from, but I can tell, you and your mom, are very kind in praising Serbian food. I had been living for years and years in English speaking country and hardly anyone of English, Dutch or Aftican origin who tested my specialities liked it. My late husband of English ancestry ban me to cook SARMA in his presence. Few decades ago Serbians were (and still are) highly unlike by westerners, so I think that could be a reason for their dislike. In other words nothing Serbian is cool. Many thanks for your ratings and openness to even try it. My own child got to learn to love many Serbian dishes since she started eating consciously in her teens after visiting Serbia. She keeps joking that I deprived her of good food in her childhood. Sadly, because of family set up I couldn't cook separately at the time.

caimac, which we also have in Romania is the grease of the (fat) milk after you boil it. It surfaces it after you boil it. It is improperly called cheese it is just the fat of the milk halfway to becoming butter

Odakle si ti, majke ti? Lupas gluposti kao i ovi Amerikanci. Bas me zanim sta bi Slocenci rekli kada bi ja zeleo da iskusim slovenacke specialitete u Sparu ili Mercatoru. Slovenacka gastronimija je odlucna, znanjci na Velikoj planini su nesto posebno i sam ambijent kada Slovenci pocikuju na Veliku Gospu ako se ne varam.

@@Ђикан O cemu ti to? Ne kazem, da je to sto su jeli u Kanadi (ne u SAD), isto kao sto bi jeli da su negdje u Srbiji. Ali majci od ovoga lika, je to najblize kada govorimo o Kanadi i balkanski hrani. Drago mi je sto ti je hrana u Sloveniji odlicna, dobro nam dosao ponovo za kulinaricne poduhvate.

@@69vrana ocigledno nisi razumio. Moj stav je da je Slo balkan i da kvalitetne specialitete ne mozes traziri u supermarketu, kao sto oni traze ajvar. Valjda znas sta je ajvar iz trgovine i domaci ajvar, tako je sa svim namirnicama ili kako vi kazete zivilima. Zato je hrana u tim " malim" kafanama ukusnija jer nabavljaju direkto od poljoprivrednika i stocara, prosto jeftinije je.

@@Ђикан Cujem sta kazes, i slazem se, ali kao sto sam kazao - majci od ovoga lika je ajvar i kajmak i sve ostalo, sto su jeli, i sto je vjerovatno sve doslo iz supermarketa, najblize balkanu, sto ce ona vidjeti u svome zivotu. I ocigledno je to bolje i ukusnije od hrane na koju je navikla.

@@Ђикан naravno da nenozes zamenit original necim sta kupis u supermarketu ... ali ja recimo u dijaspori nemam drugog izbora ili mi neko donese sto jest vecinom svercanje 😂😂😂 ili jedini izbor supermarket pa cak i u vecini nasis fast food lokala i restorana nije pravi kajmak recimo vec isti taj sto ga u supermarketu kupujem pa cak ni cevapi nisu isti a nasi ljudi ih prave ... naravno da joj pokaze kako se pravi kajmak verujem da bi njegova majka probala da napravi kajmak kod kuce da ima vremena sigurno bi naucila sa vremenon nije tesko naravno nebi to bilo isto kao kod nas ali bolje od kupovnog

You should try Burek and Yogurt, but Yea Kajamk is the best. I am Serbian but live in America, Can’t wait my vacation in Serbia and eat kajmak,punjena pljeskavica, burek best food ever!

Can't you find some local, raw milk, from some local farm? Is it really that hard to get it over there? The obsession they have with processing food, until it loses all the nutrition is ridiculous. But that's also in plan for us, as well, will all the insane EU laws. People love to come and eat real, nutritious food, but then you see them complain about bunch of things, like milk is not processed, it's too fat, heavy, no diet this and that, why pork, where's halal meat, kosher, ban smoking because tourists don't like it, they don't make pljeskavica, cevapi with gloves(it sticks to a glove, they'll need half an hr to mould one, with costumers waiting. Impossible to do), ect ect. Like they're so used to all those l laws and want it everywhere. Even though, lack of all those laws, policies, is the reason they wanted to come to Serbia(same goes for all other countries, still relatively free from western strict laws for everything, ridiculousness) in the first place. It's so weird. If they could just adopt, roll with it, wherever theu go, without being so anxious about everything they're not used to, and enjoy good food, good time spent travelling. Like, you left home to visit other places, because they are different. If all become same as you are, at home, there will be no joy in travelling.

Hello from Belgrade, Serbia. Just one reminder for you: You have to watch out with ajvar, next time use one dedicated table spoon to take ajvar from jar to plate, or to another little dish. Have to watch not to touch the plate with that spoon, you don't want crumbles or another food particles in ajvar jar. It will spoil the ajvar. Fungus will apear on top of ajvar and then its not good. Kajmak also don't like bread crumbs in it. My favorite sandwich is traditional Serbian sandwich: Hot lepinja (traditional serbian bread, fresh from the oven), kajmak, some smoked meat like pečenica (smoke roast-meat) or smoked sausages or pršuta (prosciutto) and little bit of ajvar. All that with a glass of jogurt (yogurt), but our type of yogurt. The type you can drink. ;)

Hi there. My hart warms seeing you enjoy and appreciate the food we eat on daily basis. Nothing connects people better than food. It's hard to be objective regarding what food is the best in the world, but I assure you in Serbia we really like to eat well, and do our best to provide high quality ingredients. On the side note, as it's usually the case, supermarket products and homemade ones can't even be compared. Do yourself a favor and try to find someone who makes ajvar and kajmak in small batches. They are otherworldly.

Greetings from Serbia. You tried young cream in a restaurant. And you tried old cream at home. Both have a specific taste and different purpose of consumption. Young cream is better for spreading on sandwiches and the like, while old cream is more oily and is used more in frying and baking.

Well, dear serbian food lover. Original, old fashion Ajvar, recipe from villages is made from high quality fool red meaty roasted paprika, has to smell like wood, like smoke. You grill it, than put in some dish all together cower tight, to get soft and cool down. Than you peal it off. Than you leave it for all hight in cool place for juice to drain off. From that, there are two ways. One is to make smal stipes od paprika meat with the fingers what considered like an speciality for special occasion. Another way is to mince them on meat grinder or chop them with the knife. Than you out it in casserole and put some oil and sote it very often mix it with the wooden big spoon, not to burn from down side, until that wooden spoon can pass the way you can see the bottom of the casserole. Then you put some salt, som minced fresh garlic, very little of vinegar. While this was cooking, in the oven you put glass jars and heat them up very much. Than you put hot Ajvar in hot jars let them open for short time in hot oven so Ajvar make some protective layer, not hard as a crust but it change a color a little bit, became darker. Than yao can seal them up, and they can survive even two years/usually they do not as this is delicious and we eat them easily. Well that is real Ajvar. When you open the jar you can put very little vinegar/drops, or some fresh garlic to provoke a little bit more taste and aroma. Ajvar can be neutral or hot with the chilly paprika. Ajvar considered as a luxury, expencive winter salat as for one 800 grams jar of quality Ajvar, you may ned 3 - 4 kg of high quality meaty paprika. Everything else, with eggplant, tomato... is consider Pindjur. This is very taste as well and it is cheeper for production. In ancient time family eats more Pindjur and keeps Ajvar for big family meals, celebrations, holly days.... My family is from southern Serbia where Ajvar is totally traditional food that we are proud of it. Same old way, home production, of making Ajvar you can find in Macedonia and eastern Bulgaria.

Thanks for good video. Ajvar you bought is from Podravka, they have many good products but ajvar is not one of them. In their product the peppers from which ajvar is made are not roasted, and that is the key to a delicious ajvar. If it doesn't say it's made from roasted peppers, don't buy it. As for the country, the tastiest are from North Macedonia and Serbia.

You may not dip the knife/fork/spoon in Ajvar when you dipped it in something other or ate with it! The Ajvar will be rotten in a few days even if it is in the fridge if you do so. Thank you for the vid, really enjoyed it

@@ДраганНонковић probably. The kaimak I ate in Turkey was more towards a sweet fresh cheese. In Romania caimac is just the fat on top of the (integral) milk.

@@mimisor66 In Serbia also. You milk your cow, then you boil that milk as that milk cools down milk fat separates itself at the top creating a crust you take that crust add some salt and that's it.

Take your mam to try sarma, that is something best. And this things are very tasty too: 1- pita sa krompirom(mesom,sirom) 2- surena jaretina ispod saca 3- ljutenica ili ajvar po ukusu 4- pavlaka koja se jede uz sve 5- pecenje sa raznja. There you go, you can ask Ivana, she knows that. Chears🍻

Good idea, Eastern European is fabulous, but it depends, some people might like it more or less. I gew up with these, so, for me is that taste of my childhood. Zacusca is same as ajvar, but more dense in taste, and more oily, my opinion. But Serbian food is awesome. You can't find in a regular mall those tastes, or those products to use for cooking.

You purchased an industrial brand of ajvar made by Podravka, a Croatian manufacturer. If you like the product you gonna like a much better ajvar’s even more. If you can’t find a Serbian brand, try the Macedonian ajvar.

You need to put the store bought ajvar into a pan and fry it on the stove with constant steering until it boils for a while! That way the excess water evaporates and you get the real almost homemade ajvar since the store one is not fried enough so they get to have bigger profit! You will be able to smell the difference, and it shouldn't have any water in it, just oil. Enjoy!

Macedonian ajvar is the best in my opinion, but make sure you can see the pieces of pepper inside and it also must look a bit oily... :) Good luck ajvar hunting! P.S. I'm Romanian and I've been trying different ajvars around neighboring countries. Also, Bulgarian lutenica is good, but ajvar just has one class above... No disrespect for anyone, I can only compare what I found in stores - from the cheapest to the 10 euro 300 grams ajvar jars :) In terms of dishes, Bulgaria wins the race with sach and kavarma, Macedonia wins with ajvar and leskovachka, Serbia wins with cevapcici, Albania wins with borek and, unfortunately, I still haven't been to Bosnia and Montenegro yet;(

sach is also a thing in Serbia and I am not sure what leskovachka from Macedonia is but that word "leskovachka" means that it comes from Leskovac which is a town in southern Serbia.

@@majdavojnikovic Best sarma for me are the ones in wine leaves, I've tried them all around the Balkans, but honestlyI was impressed with the ones in Armenia if you can believe it... very nice. But I like it from all countries, including Romania :)

@@valentinm0 sure, in wineleaves, and also in collard :) but the pickled cabbage is something else :). With these dishes, they are made in so many personal ways, theytaste and smell different and get different texture from every cook or ingredients, so that is always a gamble when you eat it for the first time. They can be godly, bland, stinky or disgusting :) You might just be unlucky if you didn't like the classis picked cabbage sarma. I watch international KZbinrs going to some restaurant in Serbia and order sarma that already looks like - I wouldn't touch it with the fork :))))
