nice, we came to a similar recipe. Though I close the switch during the bloom. I close it earlier as well for the 2nd pour @ around 1min. With immersion last stage lasting 30s-1min depending on the coffee, as I think the rate of extraction by the water plateaus. I agree it gives more body, best of both worlds!

@@markdavidgan hmm I do tend to err on the coarser side, but thats more to do w my preference in dialing coffee. I go rly coarse then finer and finer till I reach astringency and dial back

Great video. The hario is my daily driver as well. Been really enjoying the Sibarist filter for it, have to be on the ball for draw down time though.
