How are you finding the DF64v? Are you running the stock DLC burrs?

Yes, I'm using the stock burrs. It works pretty well and versatile, I can use higher RPM for espresso and lower for drip coffee.

21 second shot. Grind could been a bit finer.

It doesn't have to be 25-30 seconds. It's whatever time gives you the taste you like. It could be anything from 15 to 45 seconds!
