SIngle origin coffees can sometimes be difficult for espresso since their unique characteristics can either be muddled in the complexity of a dense shot, or go the opposite direction and become extremely intense to the point of unpleasantness. So in this video I share my process on how to bloom an espresso on lower pressures to reduce the punchy acidity of a coffee, and produce a clean flavorful shot without the ability to pressure profile.

Bro is creating a hollywood-blockbuster-therapy-film by showing his daily routine and calms all of our days doing so. Thanks for that! Coffee isn't just about caffeine and it's nothing you should look at with "I dont have time for that much effort". It's about making and taking the time, creating a ceremony, feeling like participating in a ritual and mindfully palet those flavors you chase along the process. For me making coffee is truly a form of meditation.

What difference it does to bloom a puck of the same weight but in a different size "bigger" basket exactly? I've always used 20g precision baskets so I would need with the same basket to underweight say to 18g to bloom the right way in that same 20g basket??

It gives the puck room to expand- if you look at how deep his tamp was, and then when he drops the portafilter after the shot it had swelled up to the ridge. I won't pretend to know why this matters, but I've done it both ways and it makes a difference. You are correct, underdose 18g for your 20g basket.@@PanzerIV88

glad to see you're using the df64 gen 2 (not the v2 like you have listed) IMO it's the best single dose 64mm grinder for the value right now. you truly cannot beat the price and I find it really hard to justify buying any other single dose 64mm grinder over it unless you really want a quiet operation

@@Sprometheus awesome man, it looks like you got it from whole latte love because they set them to 10 bars, but my understanding is that the traditional nine bars is nine bars at pump which is more like 8 or 8.5 in the basket which is looks like is exactly what you set it to, is that accurate? Love your vids

Always a pleasure to watch these! How are you controlling the temperature of the water? And what range do you use? Standard for all kinds of beans? And roast profiles?

Thank you! I have a pretty standard water range for most coffees, usually only adjust it more than 5 degrees in any direction with coffee that are noticeably darker or lighter than my average beans and rely more on the grind, time, and other factors to adjust flavor. I usually start around 202 to 205.

The only part the fools up the relaxation is the vibration pump sound. Im sure its good to use and ramps up pressure nice and slow but, that sound.

I think this is DF64 gen 2, not DF64 V2 (the latter was the second version of the first generation, which then went up to V5). Great video!

Thanks Noah! I’ve toyed around with a few different mineral blends, but have found myself circling back to TWW espresso. It’s got a nice balance for the wide range of coffees I use. I did try their dark roast minerals that reduces acidity, but to my tastes and the coffees I prefer I want some of that brightness.

Thanks for this video. I have the same machine and am wondering how long typically is the bloom interval, before you re-engage the pump? 3-5 seconds?

I have really looked at the timing of it, and more so the pressure being built. I often wait until espresso begins to reach the screen of the basket and then cut it to the halfway point and watch the pressure and go back to full on around 2-4 bars.

Love your videos as always! Question, how long do you let the espresso bloom for, before continuing the shot? It looks like only a few seconds? P.s. off to my profitec to replicate the exact same shot :)

Thanks Joel, it depends on the coffee really, I’d say 5 seconds on average but up to 10 on this machine as I keep an eye on the gauge and make sure to turn it back on full pressure before the gauge drops too low, say under 2 bar. This can vary depending on your machine.

I’m so happy to see this, I’ve owned this machine since 2019 and I loved it. I’m looking to upgrade to the LMLM or GS3 MP. I would like to know your opinion. Will it worth the jump from the pro600 to either of those machines ? Would you noticed any substantial difference between your shots? My grinder is a eureka atom 75

At these high level of machines, there should not be any difference in shot quality. You mostly pay for style and workflow.

Nice video...I see your puck screens get the screw damage (LM?) Do you turn them to even out the bend? Using puck screens with LM I'm using a larger size basket to adjust headroom

I’m most intrigued by how much the puck expanded! Looks like it came out almost 1/4” thicker at the end. Will definitely try dosing much lighter than usual when blooming shots on the gs3

Yeah I tend to use smaller doses in larger baskets when blooming. Particularly on an E61, and even a GS3MP if you don’t go to fully closed the level of water stays in the basket and assists in the saturation process.

The colour of the beans look dark and a bit oily for light roasts. Woud you say it's more like medium roast? I'm also curious about your opinion on WDT tool that comes with Lagom P64 from Option-O. I have been using it for almost a year but I can never achieve well-distributed pucks like I see from youtube. I assume it's due to the fact that the needles are too thick and there are only four of them attached. I really like the feel and its build quality but I'm considering getting a new one like the one from Normcore.

I don’t recall seeing any oil on these beans, and it can be hard to judge the true color based on the lighting, but I’d say medium-light from what I remember. I think WDT is a great way to achieve better and cleaner extractions. I don’t personally use the one that came with the P64 for the reason you mentioned, the needles are a bit thick and I prefer .22 to a max of .30mm for mine. But also being able to pre wet or pre-infuse makes a big difference as well and can really help keep the puck and flow nice as opposed to all the pressure hitting at once.

I thought when the lever is dropped halfway, the pump turns off but water is still slowly dripping from the group? I'm not sure if its the same for Profitec 600 but it does that for my Bianca.

It can vary depending on the machine and some that are using the internal tank have no line pressure so when the brew valve is open there isn’t any flow, that’s the case with the 600

Trying to work out in my head how to do that in my Profitec Go instead. I have the same 7-8 BAR lower limit on the OPV screw, but I'd have to partially open the steam valve since I have no way to turn off the pump w/o triggering the 3-way valve.

The shot was around 20 seconds after preinfusion. I cannot imagine such a shot to be properly extracted. What is your secret? Or are your sourness receptors destroyed from drinking specialty espresso for all these years :D p.s.: this machine looks like a direct replica of the ECM synchronica.

interesting. very short bloom. I never use them on my Elizabeth because of the taste but. maybe I'm doing it wrong 🤔 As for puck screens, I use the thin ones. they are simply cleaner and I don't think there is any difference in using them

Have you tried using the Sift Infusion of the 47⁰ lever position as a first step? I use a prewet for 8 seconds before full pressure. With very light roasts , I add a 10 second pause and then full pressure.

I have used that on the Bianca, but the issue is it doesn’t really pull much water on the Profitec at the halfway point. It’s barely a drip, and sometimes it’s nothing.

@Sprometheus Try going to 47⁰ at 45⁰ nothing. On my Lucca X58 HX I get a good flow, but no pump pressure. That extra 2⁰ is the extra that starts the flow, at least on an E61

Why not use a machine with flow control for blooming espresso? Will get better and more interesting results.

Oh yeah for sure, but its good to attempt and try them out on other machines as not everyone has access to flow control on their machines, and with blooming all you need to do is stop the flow, but it definitely can really kick the flow into high gear when full pressure kicks on again.

Does the df64 V2 not need bellows? I was using a friend's v1 at the weekend and if I didn't press the bellows then close to a gram was stuck in the throat, even with RDT.

Im surprised you dont end up with a lot of excess water above your puck. It seemed like there was a lot of room for water to sit on top of the puck screen.

Haha yeah I use one camera and these workflow videos take me about 6-8 hours to produce. It just gives an illusion of a straight through process.

I am wondering if there are any white papers on the lenght of time of blooming Vs the TDS of the shot? I am using a QuickMill E61 with head pressure gauge and flow control, my motor control is setup with hair trigger setting so stopping the motor without releasing the pressure is easily achieved.

Well, it seems cool. But $20,000 and considering it’s only 220v it just doesn’t seem like a home machine at all to me. I would prefer to see some updated on current machine, or different trim levels on them.

I like using the filter screens also and am curious of your method to remove the screen and puck. I use two spoons and push one side of the screen down which flips the other side up and then use the other spoon to lift it up and out.

I've been using puck screens for quite some time now. If you've a tamping mat, just flip the portafilter upside down and tap it lightly on the mat - I tap on the drip tray because I don't mind scratching it up. The puck screen should separate from the puck once you do that.

hey , when you pull the lever half down , the release valve stay closed (there are no entrance off water to keep the pressure because its a water tank machine)but the pressure drops through the coffee. doesn't it make the cookie expand and chanel?

Nah, I didn’t have much of an issue considering Sumatras can be a little tricky and for me tend to really speed up a lot towards the end of the shot, especially with the bloom that already made it’s way through the entire puck cause some degradation of its structure.

Obviously you should do what is best for you and/or your channel, but I wanted to voice my opinion and express that I personally prefer videos where you are talking. The "montage" video style doesn't hold my attention well. But it is certainly relaxing!
