Just made this for my wife. The avocado oil makes all the difference! I always used olive oil prior to this. The twice baked potatoes were the star of the show! I added a little crispy bacon and some cheddar crumbles. They came out perfect. My wife hated spinach until last night. Your creamed spinach was "heavenly" according to her. She also loved the lettuce wedge salad and now wants the all the time. I think I've created a monster... Going to try your hangover burrito tomorrow. Wish me luck!

Sam, the cheese you used on the potatoes was BRIE (pronounced BREE). It is a French style "soft-ripened" cheese that has a RIND (the part you scooped out the insides from). It is NOT Alouette or Boursín; those are processed cheese spreads and have NOTHING to do with what you used (other than having cheese in them). Keep the great content coming, and your welcome! 😉
