Sam you I can’t even describe how much your channel has upgraded my life! The other day I had a croquet monsieur at a restaurant. I was so blown away I wanted to make one myself. I searched KZbin for a recipe and sure enough my old pal Sam already had a recipe for me!! Made it this morning for me and the Mrs with the fried egg on top (Madame) ... let’s just say: Breakfast of Champions! Thank you Sam!!!

I worked in a restaurant where we made fries from potatoes freshly cut in house, I have a pro tip: if you let them sit in the water in the fridge overnight they get extra crispy and delicious when fried.
@Rantman92 жыл бұрын
I never thought that was a "pro tip" I thought everyone did it that way. The only time to ever use a quick blanche is you don't have time to wait overnight
@tmango782 жыл бұрын
I was not aware. Thank you!
@ejwennberg2 жыл бұрын
@@Rantman9sorry i forgot everyone who watches these videos already knows everything there is to know about cooking I shouldn't have used the word pro. You don't have to blanche them. As sam said You put them in cold water to keep them from going brown and to rinse off some of the starch. They can go straight into the fryer like Sam did but my not-pro tip is if people wanted more crisp fries they could leave them in the fridge overnight.

I recently had bulgogi beef queso fries, it was incredibly good. I'd not have thought that fried kimchi, sesame fries, bulgogi beef, queso, and a slightly spicy sauce would've been so tasty but it blew me away. This whole process reminds me of that a bit, fries as a base for other delicious things is always a good idea.

My Mom made the BEST fries ever - crisp on the outside, and fluffy on the inside, and never greasy. She did it by deep frying them ONCE, no blanching, just in the oil until they were done, and then out, and into a brown paper bag for seasoning, and to absorb the excess fat. A couple of years ago, America’s Test Kitchen did an entire episode on French fries, and their conclusion was that making them the way my Mom did produced their best fries.

Sam, on the subject of fries and knowing how much you love a runny egg…there is a special dish made in Madrid - a famous restaurant called Casa De Lucia - that is simply fries, runny eggs and salt all mixed in. So simple but so delicious. Great as a starter or a side. Perhaps something to make to accompany one of your burgers.

Yo! try the “kapsalon”. it's a dutch one. This dish appeared only in the early 2000s and is simply fried potatoes covered with döner (or shawarma meat) and gouda cheese that is then melted in the oven. On top, pieces of shredded lettuce and a garlic based sauce with sambal are placed before serving.

Well, this has been around for a long time here in Tennessee. We slice the potatoes cross ways, fry them in oil in a skillet with the onions. In another pan, cook your hamburger with salt and pepper. When done, drain all on a paper towel lined plate to reduce oil. Top with cheese and melt. Here it's called tater mash. Some of the best food you can ever wrap your lips around.

hi there mr cooking guy, i found you while searching for chow mien. no need to double fry your french fries. i am the queen of home made french fries and my mom made them for me all the time growing up and soon learned how. And i always rushed to put them into hot oil, unknown to me at the time, that that is the best way to cook them in oil. Start them in cold oil, completely immersed in oil, and then turn the stove on medium high. no need to turn the heat down, and do not turn them for at least 10 min. this way, in cold oil, they poach, and then fry to a nice crisp just as you would get double frying them. trust me.

Double fry method only really works if you pop them in the freezer for a bit (helps release moisture, as in water in the potatoes) and will get crispy on the second fry. But he immediately put them back in so not really making a difference
