The loaf you had would be called Un Bateau (a boat) in parts of France. As to using a mandolin safely, use the mound at the base of the thumb to push the item being sliced, keep your fingers out the the way, and always pay attention.

The soup is truly phenomenal with 4oz guyere over old sourdough bread. Possibly even better with left over pot roast over egg noodles. Making third batch as I write, to try on burgers. My wife is not an onion fan and yet requests that I make this and keep around the house for quick meals or most anything else. Excellent!

Whatever we don't eat after we make a batch, we put in restaurant storage containers and either drain them and keep them in the fridge for awesome toppings, or put them wholesale in the freezer to re-heat later.

I think it is some sort of black wood. He mentions it on his website but I can't find the exact product and he does not have a link.

one learns something new every day. Today I learned for the first time about a French Onion soup that does not have a white wine in it but instead uses (spanish) Sherry. Very good recipe, faster than the ones I knew. And that is a good thing.

Hey Sam, I’m finally getting around to trying your French Onion Soup. I am re-watching this video, and the first thing I hear is you and Max discussing that you don’t know what to make. May I suggest, CHICKEN PAPRIKASH? I am looking for a recipe and could not find one on your channel. Thanks.

Gruyere is the only food that ever made my late wife's eyelids flutter. It was at a dinner party, and everybody saw it. We're making this tonight.

Needs to be looser like a soup, final product is almost a puree.

I make it a little different. Caramelise the onions further till they are darker and sweeter and even more reduced. Deglaze with red wine. Lightly flour the onions and fry for a min. Add the beef stock and leave it reduce for a long time. Hour, two hours, more. Season with salt slowly and continuously until the flavour just pops and just before it tastes salty. Result is a darker, thicker, absolutely decadent French Onion soup.
