I am so jealous of all you guys. I am Chinese living in Italy. We have absolutely no decent Chinese restaurant here. The best Chinese food around is in my kitchen but I am not a good cook. It is so unfair...crying...

I’ve never been so intimidated by Chinese cuisine until I came across Szechuan cuisine. I can never convinced myself to visit any Szechuan restaurants and order myself a full blown Szechuan courses like you guys did here. I have a lot of reservation for this cuisine. The color and the extreme amount of peppercorns used turn me off badly. Anyway just want say that your conviction to explore and introduce Chinese food is worth applauding to. Also your dad and mom are the perfect example of a great parent that encourages their kid to chase their dream and passion. Kudos to you and your parents! Hope to see more great foodblog/content from your channel!

Amy 你下次可以先吃分量小的不带汤的菜,吃完前面四道菜最后吃回锅肉可能已经凉了,其实可以最后吃水煮鱼片,因为它上面覆盖了一层油,不容易散热,可以保温很久

And I think you are absolutely on point about sichuanese food: spicy is just there to bring out the bold flavors, unlike how sichuanese food’s rep in western countries, which is that spicy is the only thing that comes to mind. I also recommend watching Li Ziqi’s videos. She shows how sichuanese food is really made and most of them don’t contain chilly peppers at all!

Wow, I just discovered you today and I’m SO Happy. I absolutely love Sichuan food, my favourites are boiled fish (I agree with your dad that it is the yummiest fish I have ever had), maps tofu, cold noodles, and eggplant. I first discovered this cuisine watching Anthony Bourdain. I’m in Melbourne and Bourdain raved about Dainty Sichuan where I have had all of the above but they also have an incredible eggplant dish that is crunchy and toffee-like on the outside and soft in the middle. It’s time I went back to Dainty Sichuan I think! I can’t wait to watch more of your content. Thank you!

Amy, we usually say “碰一个”, “喝一个”, or just “来,来,来” and rising your hand with that glass of beer. It is true that we don't usually directly drink with a bottle, and just pour it into a small glass repeatedly.

Yeah, Mexican aboriginals are the ancestor of Chili peppers around the world. Thanks to Sichuan cuisine's adoption, now more and more people are able to enjoy Chili peppers. Sichuan and Hunan have been locking in competition who has the best Chili pepper dishes and claimed they have been Chili-spicy for thousands of years, which is completely false. Actually they have never seen or imagined how many heirloom Chili pepper varieties on this side of Pacific coast. :-)

Saying 干杯 and having a sip is totally is fine. You can even replace the beer with juice and still say 干杯.

Looks great. Your dad is very brave. I was born in Beijing but immigrated to Australia with my parents when I was 4. I have never gotten used to eating offal and I can’t use chopsticks to save my life. It embarrasses my parents that I sometimes need to ask for a fork in Asian restaurants. Love watching your videos Amy. It really makes me feel closer to my roots. I hope that one day I’ll be able to travel throughout China like you have been able to do.

麻婆 in Sichuan dialect means " pockmarked man's wife". There is a pockmarked man, nickname as 王麻子,who has a beautiful wife, people call her 麻婆,which is short way stands for "wife of pockmarked Wang", she knows a special way to cook the tofu, that's how the dish name come from.

You can say: "我干杯, 你隨意", or vice versa.

As a semi-Sichuanese and meat-lover, highly highly recommend 酥肉!You can eat it dry with spiced salt or slightly cook it in hotpot soup! Trust me it's AWESOME

Growing up in China, I was always told that when I’m ganbei-ing someone superior to me in age or work, I should make sure to put my cup lower than his or hers as a sign of respect. I don’t know if that’s just Beijing or it’s the same elsewhere in China.

Sometimes people jokingly dodging the clang, move their glass lower than the other and try to clang when they are lower, end up lowering the glass to the floor.

To my knowledge "祝酒“ is the act of toasting whereas 碰杯 is literally clinking your glasses together... I don't think people use either casually to say let's drink?

I was born in China and visit there often, Sichuan food is my favorite. There's so much more but if I had to only choose 5 I would have chosen the exact same 5 you did. Great video.

I am Chinese living in the UK currently and when I am eating out at a Chinese I usually ordered the exact same dishes as Amy! Fuiqi feipian (my fav out of the bunch because it's really good if you're eating it with rice!) , shui zhu yu (the boiled fish dish), mapo tofu and sometimes laziji (mala chicken). Guys, give them a try at your nearest Chinese restaurant!

Spicy Joint is probably the best Szechuan style restaurant in Sydney. There are no other places that have the consistency and quality of this restaurant.

BTW just when i was wondering how you hit Huiguorou, the all time classic, you just said baidu. No wonder your knowledge is so different to the stereotypical western chinese learners. Kung pao chicken isn't so common in sichuan anymore, but i have to give u credit for putting it on your list, after all it's THE dish let people outside sichuan start to know sichuan cruises, and it is a genuine sichuan dish. I am very impressed you put kung pao chicken on your list after you've done your research on how it should be like instead of blindly following the stereotype trend.
