Except in this instance, it is not so deadly. Smoking is a health hazard, eating chilies is a rectal hazard. That is the difference!

I have that same problem in the US, and I can understand it, because good food gets wasted if someone sends it back or customers won't return if they cant handle it, which most can't. The first time i had near real szechuan food, I drove 50 miles the next day back to the restaurant , because I couldnt get over how good and sinus clearing it was. ive been hooked ever since. but it's annoying. I almost feel you have to earn spicy food street cred showing that you can handle spicy food, before they accept you and will make it the same way as they do for anyone else. but that true for thai , indian and korean restaurants as well. Except for Jamaican food... they dont seem to care.

What a great idea getting a local to order, but funny that he was being very cool about the spice level. I love the vibe of eating on the street too and it really brought back memories of eating on the the street in other asian countries. I've just discovered a new place in Melbourne CBD that makes Lanzhou noodles and the most delicious Roujiamo I've ever tried (I've only had it in Australia though).

Oh, this was perfect! Even after changing the playback speed to .75X it still went by way too fast for me. I never, ever feel that a video is too short, until it comes to Amy's videos. So happy to see Amy exploring the Jiangxi food currently! Jiangxi is the place I attended my undergraduate school. Jiangxi has so much to offer! Please don't forget to dive in the Mifen (rice noodles) world, you will see so many diversities there in Jiangxi. Fried Mifen, stired Mifen, soup Mifen, with so many stew choices to top on. This is my life. I'm a chili head but the fact that I'm white makes everyone think I can't handle spice. To be perfectly fair, it is not infrequent that white people say they love spice, but cayenne is hot to them. And yes, American, German, French, etc. cuisine is the least spicy. I get where they're coming from. However, I'm literally at the point in my chili head journey where all but the hottest foods, chilis, hot sauces, etc. aren't even hot to me. I have to buy my hot sauces from a special store. I'll watch people die eating something and it barely warms my tongue. When I go to an Asian place, and I say make it as hot as they can, I follow with something like "The hot sauce I eat at home is made with Ghost peppers. Please actually make it hot". That generally works.

Hat's off to the last night dish. Now, that's "living locally" instead of doing the touristy moment. I can relate with my time in Asia, and doing those late night food dines after a night of drinking with best of friends. Yes, enjoying the local vibe - some resident playing drums, you sitting out in the side walk as cars drive by. Experience the ambiance of locality.

In my view, this is a socially anxious and introverted young person who, out of curiosity and a momentary impulse, responded to Amy's invitation but didn't know how to interact with a foreign woman he was meeting for the first time, leaving him feeling a bit awkward and appearing somewhat reserved.

I love your description of the dishes and how you always promote Chinese food 😊 the way locals like it compared to many others unwilling to appreciate outside their comfort zone. But the French is wilting in me when comparing coq au vin to these spicy dishes with shaoxing wine. The alcohol will mellow your tastebuds. Besides the lady said they customise the dishes to foreigner’s palate despite your preference so that you can enjoy your food. No one likes to waste food.

chicken, duck and frog - all end up looking same buried under a ton of red chili ... my favourite chili at the moment is our local Sydney dumpling place that does a burnt dark fried chili sauce which adds a nice whammo to their dishes

Xue Ya has always been one of my favorites. Although I always prefer to eat it when it is cooled. The spiciness is less in your face and you can enjoy the whole flavor better

Another highly entertaining spicy food adventure! But, may I suggest...a completely opposite direction for your next food adventure: Find the greatest non-spicy food in China!! I love the diversity of Chinese food but my palate just cannot handle spicyness (the maximum level I can handle is 微辣). I am sure many foreigners have similarly ambivalent feelings about Chinese cuisines. I think in the past videos you have traveled to places with cuisines that are not known for their spicyness but their rich tastes or fresh seafood ingredients, like Canton, Anhui, and Zhejiang. But I don't know which is the "best"!

"Hugh??" and that was it? You should have told her the truth: "But I was here to film my challenge. It's not a challenge for me if they toned down the level of spiciness for me.". People in China are FINE with this type of comments. They won't feel blamed or offended if you just tell them in a lightly tone (which shows "What a shame..." instead of "How dare you!") or a self-mocking tone (as in "I came here all the way to film a challenge, only to find it got dismantled because I look like I can't handle spice! Lol").

The kitchen chef must be thinking: "Man, I did good today! I made those delicious dishes AND lowered the spicy level so that the foreigner out there could enjoy them! I ROCK!" Amy at the table thinking: "I didn't fly all the way here just to have a modified version of your food..." Server lady thinking: "What's the problem?" Liu would be looking down at the table thinking: "can I go now....?" LOL Jokes aside, it's very nice of Liu to come out and help Amy order some food. The first restaurant just accidentally 好心干坏事... lol They might be kind-hearted but the extra attention went to the wrong place LOL. But actually, I think if I went there with my friends (a bunch of ppl clearly not "local"), we'd probably end up getting the same spicy level as Amy did---and probably wouldn't even notice if we don't ask them about it specifically. LOL

Amy, there's a dish called "辣得跳" from "湖锦酒楼" in Wuhan I think you will be very interested....It's basically a frog dish, but it will give you a very special feeling of what spicy should taste like 🤣 Hope I can see your reaction on this someday!

Chinese language is as delicious as Chinese food. I’ve made many videos teaching Chinese language vividly and in a humorous way. I hope somebody can recommend my videos to those who want to learn Chinese. For beginners, Chinese characters may look complicated. But once you learn about 100 basic radicals, most characters become easy. I hope more people can learn Chinese to get comprehensive firsthand information about China and most likely seek more job opportunities.

OMG! I ran into this exact problem in a chinese suburb in the states as a similarly unassuming white girl myself! Found a Sichuan restaurant, and if I wasn't suuuuuuuper assertive with asking for spice, they wouldn't give me any! Which is such a shame, because I love that numbing spicy so much. I'm hoping that once I learn some more mandarin, I'll get taken more seriously. Love this video, that food looks divine.

I just watched one of your earlier videos; "My first trip to Shunde didn’t quite go as planned…". I was impressed. This is the second of your videos I have watched and I am now beyond impressed! One more and I'm going to be in love! You are amazing! I have not known any white woman who can inhale spicy food like you! Not only are you a lovely lady but, you like spicy food AND speak fluent Chinese. (Mandarin I believe?) I know some basic Japanese, Thai and some Korean but, my ability with Chinese is about two words above zero! LOL I would love to visit China and enjoy the many spicy dishes that have made the cuisine infamous. I want to find a dish so spicy I cannot eat it! I cook a lot and I can't even make such a dish in my own kitchen! ARRRGH!!! I am wondering if you are still in China or have you finally had to leave because of the tensions between that country and the rest of the world. I wish that people would stop with the saber rattling and settle down so all of us could get along. I don't see that happening any time soon which is a real shame. Anyway, maybe some day in a more sane time, perhaps I can get to China and if so, maybe we can see if you can you can exceed my spice tolerance level. Does that sound like a challenge you could accept? If not in China, then maybe someplace else. Thailand is also good for really spicy food, too. We will just have to see what the future holds. Meanwhile, I guess I have no choice but to subscribe to your channel. 謝謝您,稍後再見!

That is the main thing that I did not like about living and eating in Chengdu -- any bird that is cooked, either at a restaurant or buying from the supermarket, is chopped up into bite sized pieces and there is ALWAYS bone fragments that you have to pick out, sometimes pick them out of your gums, if you miss one; they stab like little knives.

我是湖南人。在中国吃辣的流行一开始是因为穷,买不起盐,盐在古代比较贵。没有盐的地方(贵州土苗即贵州人)用辣椒替代盐,提味而且促进食欲,还能用来腌渍食物。后来是因为大家发现吃辣刺激美味,所以才更加流行开了。特别是四川(包括重庆),明末清初时战乱导致人口大减,当时的湖广填四川行列中就有贵州人,带去了食海椒的饮食习惯。而川渝菜不太依赖新鲜辣椒,而是用干燥的辣椒和干燥的花椒。这些材料都能方便地运输到各个地方,便于现代四川重庆口味的扩散。 和排毒什么的其实没关系,因为广东也属于南方湿热瘴气之地,但是他们大多数人根本不能吃辣😂或者说这种玄学毛病也并不依赖某种饮食来缓解,古吃花椒茱萸,广东人喝凉茶,反正总有办法。无论湿热排毒论是不是真,都不是辣椒的流行的源动力

@@xinyiquan666 《思州府志》记载:“海椒,俗名辣火,土苗用以代盐”,贵州方志《黔书》也有提及:“当其(盐)匮也,代之以狗椒(辣椒),椒之性辛,辛以代咸,指逛夫舌耳,非正味也”

其實"代鹽說"本身就很有爭議,光憑一兩部地方志而缺乏佐證很難坐實,知乎就有人反駁過,也有點理據,其中有一點我很同意,就是現在重辣地區的菜不同時也重鹽嗎?如果代鹽說成立的話那為什麼沒多少只放辣椒不放鹽的菜流傳下來呢?

@@hisousihou 那是苗族,不是汉人, 贵州到乾隆以后才有比较多的汉人,以前基本就是屯军在交通线上,而且也是清代以后的事,湘西和贵州少民生产力落后,物资匮乏,需要和汉人买卖物资包括食盐
