Hey guys,
Back to the cakes as promised.. thought I would share my recipe quantities for a 10" round cake- it's a lot of ingredients!

Thank you so much, your so lovely thanks for sharing. I get headaches with top bun too lol so how do you work out the Vannila extract and baking powder?

You’re welcome! Haha I know.. instant regret with the top bun 😄 I don’t use any baking powder for this cake.. and never measure vanilla!

Thanks for this!! How long does each layer take in the oven. 6eggs per layer.I've got one in the oven ATM at 170 fan and it's been 45mins still a bit runny in the centre!

You’re welcome.. if it’s still runny you need to bake for longer- avoid opening the oven during this time or you risk the cake collapsing

What measurements of icing sugar and butter do you use to cover a 10” cake?

Shine Bright well I tend to make butter icing in bulk so I’ve always got it to hand.. as an estimate I’d say 500g butter and 1kg icing sugar will be plenty!

Please can you tell do you need to dowel with your 10inch sponge cake or can I put it straight onto the top of a 12 inch fruit cake also can I bake it all at once in one tin

Fruit cake is very dense and sturdy so you don’t necessarily need to dowel. Just ensure your icing has dried out as the cake above can sink into that. Fruit cakes you can bake all in one tin, providing it is the right size. For a sponge cake I would recommend baking it in layers to prevent sinking.

I have never used a box mix so you'll have to experiment.. what size pan does one box do?

How long do you bake each cake for and at what temperature please.

Normally around 40 minutes, at 170C.. it varies though, and every oven is different

What are the full ingredients for a two layer cake, like how much vanilla essence and baking powder is also added?

You can divide the recipe by 3, then multiply by 2

I’m just about to make an attempt at this 10” three layer sponge with 10, maybe 12 eggs... how long am I meant to preheat and leave in oven? You probably won’t see this in time... 😖 xxx

Hey there, I would pre heat your oven for at least 10 minutes and bake until they are well risen, golden brown, and cooked through (insert a clean sharp knife to test if it comes out clean). I hope it goes well for you! 😊

Claire Elizabeth Creates Thank you so much for replying! I did manage to do it. I preheated it at 170c fan and all three were in (one after the other), for about 26 mins. Thankfully the tester came out clean for all of them and they didn’t sink or anything. I used 12 large free range eggs at 700g in the end, glad I didn’t use 10 as the layers would’ve been even thinner! I’ll be decorating it tomorrow hopefully. I don’t have a stand mixer, I only have a hand mixer. Any advice on how to get the cake to feel lighter? I know it’s a big cake, so it will be heavy, but I think it feels a bit dense? I appreciate your input xx

Just want to add that I gently folded the self raising flour in last, with a rubber/ silicone spoon until just combined xxx

How much would I need for an 11inch cake? And how much of cake batter? Also do you have a recipe for a Madeira cake that will hold weight of cake layering and fondant? I look forward to your reply.

Weigh your eggs, and then use the same quantity of the other ingredients

I don’t think you mentioned if the whole batter makes just 1 tins worth or divide it into 2 cake tins? Please specify

Yes you can make a chocolate version by substituting some of the flour for cocoa powder :-) x

It’s a standard Victoria sandwich cake, so equal quantities of butter, eggs, sugar, flour

You need to make more mixture to put in each pan, then your cake layers will be deeper

I don’t know what the quantities are for the cake you are making- I would just experiment and make a little more than you normally do
