You can actually put ground pork with chopped bell peppers evenly on top of the eggplant before dipping on egg and flour and frying it. It's very filling.

Yes this one is a good tortang talong variant, @Sis_Liza For the ground pork, don't buy those found in the supermarket. Buy the ones from the wet market for fresh pork.

Tortang talong was indeed very delicious,to make it more very delicious you can add ground pork,or minced meat of your choice together with beaten eggs,garlic powder,and magic sarap,best dipping partners are tomato or either banana ketchup
