Notion is everything, but everything all at once can be overwhelming...

100%, keep it one step at a time. First, everyone treats Notion as a note-taking app, then slowly builds on top. Or you can get a complete system (like a SaaS) and learn as you use it. I learned it bottom-up, but for most people, a top-down approach works well.
