I use big stainless catering pans that cover half my stove and bring the frozen sap indoors to thaw. I also don’t entirely trust partly frozen sap to just be water-as it’s started sweet before, so I cook it all down. What sap I don’t drink, that is. I also secure bucket lids with bungee cords or file rubber bands. They break sometimes in the cold, but it keeps bugs out.

Could you boil some water and then put the bucket in the water. Would submerging the bucket in hot water (don't put the hot water in the bucket) ruin the sap at all? Just curious. Thanks for the upload!
