Yes!!! Eggs in the insta pot is amazing, only 4-5 min. Also, the chicken in the insta pot for 15 min and shred with hand mixer, amazing time and life saver. Loved your Costco haul!!

Thank you for taking the time to create this. I do meal plan for the week, but so many food tips on here. My biggest take away’s were to keep it simple, repeat favorite meals and list what you already have in your pantry, freezer etc. before you start planning.

We prep meat as well, but also a veggie mix . We like to do bowls with cauliflower rice. The veggies and meats are easy additions along with other toppings and sauces.

Thanks so much for the time and effort you put into this video! I have a somewhat similar process, but like you said towards the end, I’ve gotten way too complicated and stressed about it. This was an excellent reminder to keep it simple. I love how you’ve structured your template, it’s exactly how I plan already, but in a beautiful printable instead of my sloppy google doc! 😅 I also love your approach to meal prep. I tend to think of the “bro science” approach when I hear the term “meal prep” but what a gift to ourselves and our families to have easy, healthy options at the ready! Going to give it a go! 🥰

I love seeing a woman my size sharing their meal plan and also to love your body! it's so important and I feel like if you're not super skinny people don't take you seriously on eating healthy. you can be healthy and not super skinny!

Hi Mollie! I’m curious about the hard boiled eggs. I like to have two a day, but I didn’t know if that was too often due to the cholesterol in them. Does this just depend on the person and how their body handles it?

Dietary cholesterol causing high cholesterol is actually a big misconception! PUFAs and trans fats are a bigger concern to causing high blood cholesterol.

Oh my goodness! When I heard you say you bought Trader Joe’s OJ and hated it…….I felt redeemed! I just spent the $5.99 on it myself and did not enjoy my adrenal drink today at all. I couldn’t put my finger on it. But after trying the OJ alone I knew that was it. I live near a Whole Foods so I guess I’ll have to try that one.

My "meal prep" looks a lot like yours. I usually make a lot of protein for dinner and eat leftovers most of the time plus I pack it up for my husband, son, and daughter for lunch. I feed four adults so your fridge and freezer is empty looking to me because I have to make so much food right now. 😳🤪

I do keep a list of 90% of the food I have on hand. I don’t list all canned goods, because I mostly only get into them when things may be running low. Actually I keep several lists. I’m a bit OCD and so I have several categories… Desserts, drinks, regular food, fresh food, produce and things from Trader Joe’s. As you can see, I did this alphabetically and I list my foods alphabetically also. I don’t meal plan for the week, but meal plan for the next day. It works for me, as I no longer work. Sometimes I don’t follow it 100%, but I don’t feel guilty if I do something differently. I try to have some sort of produce with every meal and I find that I am doing a lot of non meat items. At 71 I still love cooking and being single, I have no problems preparing yummy and sometimes elaborate meals. Oh, and regarding hard boiled eggs… I discovered that you can also do them in the air fryer. I haven’t had a broken shell yet and the eggs are perfectly done.
