A NEW FANTASTIC RECIPE BY OUR PRINCESS - Thamin Le' thok
To a Burman the word Let Thok, conjures up a whole world of flavours and the combination of wonderful and sometimes rare ingredients, some cooked some raw.
“Htamin Le’thok” even if htamin means rice, is a rich and colourful salad where rice is only one of the nine ingredients, so do not be misled by the name! The most important thing to keep in mind is that this salad is not one that can be mixed ahead of time without running the risk of losing its most essential and pleasurable feature: the combination of flavours that remain distinct and individual.
To enjoy its beauty as well as its taste, it should be set out ( as in the markets) arranged in colourful mounds on attractive flat dishes from which guests help themselves, mixing their own portions according to personal taste. If however you want to serve it already mixed, it is something to be done at the very last minute just before taking it to the table.
6 Cups cooked rice 2 Cups toasted peanuts finely chopped
2 TBS red chilli oil for the rice 2 Cups toasted chick pea powder
4 Cups cooked cellophane noodles 2 Cups tamarind juice
4 Cups boiled potatoes sliced 2 Cups fish sauce
4 Cups fine egg noodles cooked 3 Cups cooked oil
1 cup crisp fried onions
3 Cups scalded bean sprouts Chilli powder, salt and lemon juice
2 Cups finely sliced spring onions
6 Eggs hard boiled and chopped
