When chocolate is melted, the molecules separate. When you temper the chocolate, you bond those molecules back together so your chocolate will harden with a glossy, crisp finish, with the added benafit of the molecules being bonded together to will not melt from the heat of just your hands or being out in the open at room temp or even out in the sun. It's why when we make things like chocolate sculptures we HAVE to use tempered chocolate.

Its not kunefe,its kataifi. Kadayıf in turkish However kunefe is a dessert-y dish made with kadayif/kataifi. You mix the kadayif with some butter,it has its own metal plate. You press the kadayif to the plate and put cheese on the middle,then press more kadayif. We make it in the stove but others can do it in the oven i guess.after the cooking the kadayif becomes crunchy and the cheese pulls. To finish the kunefe,you make a syrup with sugar,water and a little bit lemon and pour it onto the hot kunefe,its the best part because it sizzles and makes a good asmr Some put a little bit of vanilla ice cream and i do too its delicious. What i told is the basic things,i suggest you would go look to a recipe if you want to try it,its delicious:) (By the way,why did i kept it too long is because she mentioned kadayif as kunefe,and i wanted to inform who maybe wants to try,loves from turkiye🇹🇷) (Sorry for my bad english there can be typos,and im still not C1 in english:c)

Not it Lebanon. In Lebanon Kataif are pancakes. This is kunefe dough and it’s written on the packet
